I Used My New Better Batter! Yum

I used my Better Batter flour to make Wowzer's pumpkin bars. I used her recipe, I believe it was Paula Dean's. The only change I made was to add chocolate chips. Oh, and I didn't do the icing to save on calories. It came out great! It looked more like a cake and was delicious. I baked it in a glass pan for 35 minutes. Hubby and friend loved it too. I thought the texture would be more like brownies since they were bars.

The next thing I want to make are the banana spice cookies that were posted. They sound so good!

Thanks to all of you who recommended this flour. I love it!

I am glad you liked the results from the Better Batter flour. I have used Tom Sawyer and Better Batter now. I have made cakes,brownies, and pancakes out of both. Better Batter made a better cake which was much ligher and not heavy. The brownies were good made from both, and the pancakes suck made from the Better Batter (I have used various recipes). Overall I think I am going to stick with the Better Batter and keep a 5 lb bag of Tom Sawyer to make pancakes and biscuits out of. For cakes, brownies, bannana bread, etc I like the Better Batter, but it makes a to "cakey" biscuit (I made pot pie out of the baking mix recipe from their site) and did not like pancakes made out of it at all. I am not really interested in mixing my own flours, so having both around will be fine with me. Happy baking!!

I use Pamela's for pancakes. Both hubby and I like it. That's saying a lot since he is really big on whole wheat whole grains. Also, I never really liked pancakes before going gluten-free.

I wonder if I used less egg if the baked good would be less cakey. Hmm. I'll have to try it and see how that works.

Let me know how the banana spice cookies turn out with the better batter flour. I have not made a batch with it yet. I've been trying to cut back on baking so much. My husband keeps telling me we are going to get fatter! :lol: He has liked everything except gluten free pizza crust (can't say I blame him) and the pancakes made from better batter. He loved the chocolate cake I made for my oldest son's birthday. It was so fluffy.

      For back pain, I take a combination of Cobalamine B12, Pyridoxine B 6, and Thiamine B 1 (in the form Benfotiamine), which have an analgesic effect.  These three B vitamins together work way better than those over the counter pain relievers.  Theses are water soluble B vitamins that are easily excreted via the kidneys if not needed.  Thiamine will also help the nausea.       @stephaniekl, welcome to the forum, Is your daughter taking any nutritional supplements?   Weight loss and failure to thrive are two symptoms of thiamine insufficiency.  Thiamine deficiency symptoms are not recognized as such by doctors.   I experienced similar symptoms when I became malnourished.  Thiamine deficiency symptoms can become worse quickly, and can affect one emotionally and mentally.  Although blood tests for thiamine aren't accurate, do have your daughter checked for nutritional deficiencies.  Thiamine B 1 works with the other B vitamins and magnesium.  Thiamine and Niacin B 3 help improve Gerd.  All the B vitamins are frequently low due to malabsorption.  Vitamin D will help calm the immune system.  Thiamine helps the immune system fight off viruses like those tick borne illnesses.   Thiamine Mononitrate, which is in many vitamin supplements, is not bioavailable.  I was taking a multivitamin containing thiamine mononitrate and still became deficient in thiamine. Thiamine in the form Benfotiamine has been shown to promote intestinal healing.  A form called TTFD (tetrahydrofurfuryl disulfide) is also excellent for correcting thiamine deficiency.  A combination of Thiamine, Cobalamine B12, and Pyridoxine B 6 has analgesic properties.  I take it for back pain.   Keep us posted on your progress!       Has prednisone or some other systemic steroid been tried that might quiet her immune system down for a while? I have two acquaintances with Lyme's disease. It is a wicked condition that has long fingers.

      We have.  She is so limited as to what she can eat.  She has a nutritionist, but they are even at a loss.  Right now, her pain is so significant that she can only eat 5-10 bites a meal.   We just got some labs back today and she is hypoglycemia, anemic and her immune system is shot.  She also is positive for 3 tickborne illnesses.  Thanks for your help!
