Chocolate Cake In A Mug

I stumbled across a recipe for a chocolate cake in a mug some time ago. I thought it was on this forum. Many variations for the recipe were given. I lost the recipe. :-( I have tried googling it - and have tried another recipe I found - but it isn't the same. The one I tried previously didn't use egg, if I remember correctly (and maybe I am remembering incorrectly). I really liked it - and so did my non-gluten-free co-worker! The one I just tried called for 1 egg - and while the taste was okay - the texture was kind of rubbery. I have posted the recipe with egg since I mention it - but am hoping to find another variation. I am thinking maybe I should just start experimenting and try it without egg or other variations - but was hoping someone said - here you go...I have it!

Gluten Free Chocolate Cake in a Mug

2 tbs rice flour

2 tbs tapioca flour

1/4 tsp xanthan gum

3-4 Tbsp sugar (depending on how sweet you like it)

2 Tbsp cocoa powder

1 egg

3 Tbsp milk

3 Tbso oil

3 Tbsp chocolate chips

1/4 tsp vanilla

1. Add the dry ingredients to the mug and mix well.

2. Add the egg to the dry ingredients and mix thoroughly

3. Add the milk, vanilla and oil - mix well.

4. Add the chocolate chips and stir.

5. Cook on high for 3 minutes in a 1000 watt microwave

The cake will rise over the top of the mug, but don't be alarmed!

6. Allow to cool a little, and tip out onto a plate if desired.

7. EAT! (this can serve 2 if you want to feel slightly more virtuous).

Here is the eggless recipe:

Brownie in a Mug

2 T. white rice flour

2 T. potato or corn starch

1/8 tsp. xanthan gum

2 T. baking cocoa

3 T. white sugar

1 1/2 T. veg. oil

2 T. water

1 T. chocolate chips (if not using add a bit more sugar)

Put dry ingredients in a mug and stir.

Add wet ingredients and stir well.

Stir in chocolate chips.

Microwave 1 minute.

Stir and eat.

Variation: top with some marshmallows or ice cream.

Thank you, thank you, thank you Purple!!!! :D I distinctly remembered not using egg - and my little cake previously didn't have the eggy/spongy texture the recipe with egg has. I also felt pretty sure I used water and not milk as well.

What kind of cocoa do you use? Is it unsweetened? Would you please list a brand? Thanks.

I just use Hershey's Cocoa (natural unsweetened).

BTW, I live in Texas as well! :P

jerseyangel and DMarie - Unfortunately, I don't live in Texas anymore :( , but I do get to visit quite a bit - lots of family there. I would love to move back to either Dallas or Austin.

Thanks for the brand names and you too Purple. I had never heard of Saco. I'm scared that once I make this, I will become addicted to it! But, I have to try it, right?

      @Dora77, You shouldn't worry about getting glutened through your skin.  You would have to touch a gluten infested doorknob and then put your hand in your mouth.   I'd be more concerned with your mom's heating up gluten bread in the oven and boiling gluten noodles.  These methods cause particles of gluten to become airborne which would then enter your nose and be swallowed, going into your digestive tract.  I have to avoid the bakery aisle at the grocery store for this reason.  An M95 mask helps. If you get nutritional deficiencies corrected, your immune system will calm down and be less reactive to gluten expose.  Vitamin D helps regulate the immune system.  Thiamine and Niacin help make digestive enzymes which would help digest any accidental gluten exposure.  Thiamine helps Mast cells not to release histamine, an inflammatory agent released as part of the reaction to gluten, and also a neurotransmitter that causes alertness and anxiety, and the flight or fight response.  Pyridoxine will help improve the OCD.  Remember your brain is part of the body.  Vitamin deficiencies affect your brain and mental health as well as the rest of your body.

      I do not have evidence other than anecdotal but I am certain when I have gotten these it's the result of eating gluten (back when I did).  I don't get them now that I don't eat gluten.

      What really bothers me is if worrying about getting cc‘d from touching the same door knob as others touched is valid. Seems like an extremely unlikely way to get glutened but i read people saying that.    If thats true then theres realistically zero chance i dont get cc‘d in a non gluten-free household unless i Cook Everything myself and wash my hands multiple times in between and store all of my stuff separately

      I have been a diagnosed Celiac for over 30 years.  If I even get any type of cross contamination I end up in the hospital.  Recently I have been getting "cankers".  I am assuming that this is a result from something I am eating.  any insight would be greatly appreciated.  I follow an extremely strike diet as result and this is something new that has popped up.  I still get very ache sometimes and fatigued.  Thank you.
