I go to this river every year with my family and we eat fried chicken. How do I make it? They all get theirs from KFC and that makes me scared :blink: It smells good though...

Fried chicken . . . made some on Saturday for a gluten-free potluck/pitch-in . . .

I'm not good with quantities. I throw stuff in until it "looks" right so these are estimates:

chicken (whatever kind of pieces you like)

1/2 cup gluten-free flour blend

1/2 cup pamelas baking mix (you could use just another 1/2 cup of gluten-free flour, but this is what we like)

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/2 teaspoon lawry's seasoned salt

1/2 teaspoon pepper

1 teaspoon salt

one egg

canola oil

Mix dry ingredients (flours & spices). Beat egg in a bowl (add a tablespoon or two of water to thin it a bit). Heat a frying pan with enough oil to come up at least halfway on your thickest piece of chicken. I cook at about medium heat.

Coat a piece of chicken in the egg. Then coat it in your flour/spice mix. Place in frying pan. After coating all pieces and putting into the pan salt them all and cover. It's hard for me to tell you when to turn . . . depends on what size pieces you are using and if they are boneless or not. For me and my stove, I turn boneless chicken breasts at about 12 minutes. They should be a nice golden brown. Salt the second side and replace lid. Cook until done and nice and golden . . . maybe about another 8 to 10 minutes. Remove from oil and place on plate with paper towels.

My Fried Chicken Recipe:

1 Whole Chicken cut up

3 1/2 Tablespoons salt

1 1/4 cup corn flour or cornmeal (whatever you have on hand)

1 1/4 cup rice flour

1 cup gluten free breadcrumbs

3 1/2 Tablespoons pepper

7 tablespoons paprika

2 teaspoons garlic salt

1 1/2 tablespoons ground mustard

1 1/2 tablespoons ground thyme

1 1/2 tablespoons basil

2 teaspoons ground ginger

4 eggs beaten

1 cup vegetable oil

1. Preheat oven ot 350 degrees.

2. Heat vegetable oil in a pan.

3. Dip each piece of chicken in the eggs and then into the flour.

4. Brown both sides of the chicken and then place on a paper towel to drain.

5. Put chicken on a baking sheet and then bake for 25-30 minutes.

I marinade the chicken in buttermilk flavored with some hot sauce and mustard for several hours, then mix mashed poatoe flakes, cormeal, and herbs and spices. Then let most of the buttermilk drain off and coat with mixture and fry. Or, have egg in one shallow bowl, seasoned flour in another, and seasoned bread or cracker or above mixture coating. Dip first in flour, then shake of the excess. Next, dip in egg, and then in crumbs and fry. Sometimes I brown them and finish them off in the oven. But, I never cover them. Have fun.

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
