Delayed Reaction...from Fudgsicles?

I used to wonder why I hadn't been getting glutened by Fudgsicles, since I continued to eat them after I went gluten-free, without realizing they had malt powder as an ingredient.

A little over a week ago, a strange symptom showed up, in which I'd feel lightheaded and fatigued any time I ate food, regardless of if it was pure protein, carbohydrates with no protein, or what.

Well, I stopped eating Fudgsicles last Thursday, and the weird symptoms began to go away. Well, they're coming and going, but mostly going. And what's more, my withdrawal symptoms - the feelings of chills in the legs, itchiness, pins and needles on the body, and so on that I started to get shortly after going gluten-free, have also returned, so it's definitely the case that those Fudgsicles HAD been glutening me, only to a less noticable extent.

Well, today it's been a full week of going without them. With my hunger levels lower than they had been before I stopped eating the Fudgsicles, I assumed they were back to normal, and I concentrated on eating less food each day, basically trying to eat the way I did back when I was trying to lose weight (although to be honest, I wasn't losing weight in the healthiest way).

Well, dinner tonight was just chicken, two potatoes, and some applesauce. However, it was a chicken bought at ShopRite. Normally I have larger dinners. Only a short hour after dinner, I started to get very hungry, and definitely had to rush downstairs to have a snack, which was popcorn. I'd only eaten like 2000 calories (I'm 5'6" and male, and my calorie needs are definitely higher than that), plus the empty calories from the ice cream I got from the ice cream truck at work. I'd managed fine throughout the day.

I'm trying to figure out what this could be. There's three possibilities as I see it:

Do you think I was somehow glutened from dinner? I don't feel the GI symptoms that I normally feel after having gotten glutened badly. However, it's a new brand of chicken that I'd never had before, store-bought ShopRite.

Do you think this is normal hunger, and that I just hadn't been eating enough? Bear in mind that I'd been hungry for the past week, as I tried testing out whether or not my "hungry from withdrawal" period was really over or not. Plus, I didn't sleep that well last night or the night before.

Or do you think I am getting a delayed reaction from the Fudgsicles I cut out of my diet? I saw some people here mention that if they get glutened after being gluten-free for a while, they get the symptoms the next day or so, or feel them for a while afterward. One person even mentioned having hunger go up about a week after the glutening, and it's definitely been one week after I stopped eating Fudgsicles, and I am still experiencing the gluten withdrawal symptoms.

On the other hand, if this really is somehow a glutening accident (this is the first time I've had a ShopRite chicken), then I'm seriously going to consider using digestive enzymes to deal with accidents like this.

Does ShopRite, for any reason at all, put gluten in their chicken?

If it was a rotisserie chicken, it's a possibility it may have had wheat flour in it. I know some of Wal-mart's rotisserie chickens have it. Then again you had some Ice cream. Were you able to see the ingredients for that? Some ice cream has barley malt. And then again it may be a delayed reaction.

Hang in there, i'm sure you will work it out.

I know you probably don't want to hear this, but try to be patient, you will figure it out.

As far as probiotics, I haven't gotten around to trying them yet. I haven't needed them so far

Mister Softee is gluten-free, people say. I don't recall ever having problems with them in any way. Plus I'd had them yesterday and the day before.

Okay, wheat flour ending up on rotisserie chicken due to cross contamination is a possibility, then. Thanks. Maybe I was glutened after all. I'm still considering the possibility that maybe I just hadn't eaten enough calories (I remember feeling this kind of hunger before I started getting gluten symptoms, sometimes if I was very hungry come dinnertime and the dinner wasn't that large, but I don't think I was that hungry come dinnertime today. But then my hunger hadn't been helped that much in the day anyway).

By "digestive enzymes", do you mean an amino acid supplement like L-glutamine, or something else?

Sorry you've been glutened. I've been glutened by Albertsons and Walmart rotisserie chicken before, so only get rotisserie chicken at Costco, which is labeled gluten free. We don't have a Whole Foods here, but had rotisserie chicken from the HF in San Diego once--it was just fine!

I've had rotisserie chicken from Bobby Chez, a New Jersey-based restaurant before, and never had problems with it, that I could tell. They're primarily a seafood place. I wonder if that's why? I'm sure they serve foods with gluten (crabcakes contain it I assume?), but maybe they're more careful with their chicken? They always sell it in a plastic container.

Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.

Your post demonstrates the profound frustration and isolation that so many in the Celiac community feel, and I want to thank you for channeling that experience into advocacy. The medical gaslighting you endured for decades is an unacceptable and, sadly, a common story, and the fact that you now have to "school" your own GI specialist speaks volumes about the critical lack of consistent and updated education. Your idea to make Celiac Disease a reportable condition to public health authorities is a compelling and strategic one. This single action would force the system to formally acknowledge the prevalence and seriousness of the disease, creating a concrete dataset that could drive better research funding, shape medical school curricula, and validate the patient experience in a way that individual stories alone often cannot. It is an uphill battle, but contacting representatives, as you have done with Adam Gray, is exactly how change begins. By framing it as a public health necessity—a matter of patient safety and protection from misdiagnosis and neglect—you are building a powerful case. Your voice and your perseverance, forged through thirty years of struggle, are exactly what this community needs to ensure that no one else has to fight so hard just to be believed and properly cared for.

I had no idea there is a "Louisville" in Colorado!😉 I thought it was a typo because I always think of the Kentucky city--but good luck!
