I recently tried some chocolate bars made by Scharffen Berger. They are really good, and I confirmed that they are gluten free. I feel better knowing they are made in a gluten free company. I always worry about cross-contamination, so these are ones we don't have to worry about. You can check out their full product line at the Open Original Shared Link website. I got mine at whole foods and they are available in 1 oz, 3oz, 9.7oz and larger amounts for industrial use and they also have cocoa powder and cocoa bean pieces. This is what they said when I asked about if they used gluten flour on the production lines:

Hi Mariann,

Gluten is a mixture of plant proteins occurring in cereal grains, chiefly

corn and wheat, used as an adhesive and as a flour substitute.

As there are no grains involved anywhere in the production of our chocolate,

there is therefore no gluten in our chocolate or chocolate food products.

All products that we produce at this time are gluten-free.

I think that was one of the brands I got a few weeks ago (and couldn't remember the name of on the other post). I agree. Quite tasty. :-)

On their website they have quite a few recipes for chocolate desserts that are gluten free. I was kind of glad to see. I am hoping thier chocolates are a bit cheaper at their factory, at least the bulk chocolate for baking. I don't want to pay too much for shipping a few pounds of chocolate when I could pick some up when I am traveling to the coast, since I live here in California, and they are in Berkeley. They have a coffee shop/restaurant and I wonder if they have some of those gluten-free cakes for sale?!?

Tropical Source also has new package labeling noting that their factories are dairy and gluten free. Quite honestly, both the Scharffen Berger and Tropical Source are leaps and bounds better than the Swiss made "Rapunzel" (or something like that) that I had last week. Bleck! That SB stuff is pretty darn smooth! :-) Too bad my husband detests chocolate. :-( I didn't realize their factory was in Berkeley; I might have to check it out next Christmas. (My in-laws are in the vicinity, and we tend to hit the Berkeley North Face Outlet's clearance sale that starts the day after Christmas.)

I just saw some Scharffen Berger chocolate bars at Whole Foods Market. I almost bought one (snack size), but then I noticed that the allergen disclosure indicated that the chocolate may contain traces of MILK! GRRRRR! I don't know if this is also true of the larger baking bars or not, or how likely cross-contamination actually is, but I thought I'd share my discovery since I know you are casein-free as well as gluten-free. I hope you are doing well!

Their website discusses why they include the label about possible milk contamination - and the bars that are wrapped in their own plant which are completely free of milk.

They put that on the wrapper to be on the safe side. Some sizes of their bars are wrapped in a separate facility that also wrapps candies that are made with milk and nuts. But they are made in a factory that is completely gluten, dairy, and nut free. I am very sensitive to milk and I did not have any reaction to their bars.

      Hi all I’ve been celiac for 4 years now, I’ve done pretty well to avoid it thus far. Last night I took the wrong pizza out of the freezer and ate the whole lot!! The non gluten and gluten pizza boxes are both very similar.   2 hours later I was throwing up violently on my hands and knees over the loo.  .horrendous stomach pains,  My hair was wet from sweat every part of my body was wet. What an awful experience, just had a bad headache today  fortunately.    Is their any products/pills anyone takes if they have realised they have just been glutened to make the symptoms a little less worse.  thanks

      Yes, do take your B Complex with Benfotiamine or Thiamax.  Thiamine interacts with each of the other B vitamins in the B Complex to make energy and enzymes, so best to take them together earlier in your day.  Taking them too close to bedtime can keep you too energetic to go to sleep.   The Life Extension Benfotiamine with Thiamine is Benfotiamine and Thiamine Hydrochloride, another form of thiamine the body likes.  The Thiamine HCl just helps the Benfotiamine work better.   Read the label for how many milligrams are in them.  The Mega Benfotiamine is 250 mgs.  Another Benfothiamine has 100 mgs.  You might want to start with the 100 mg.    I like to take Thiamax in the morning with a B Complex at breakfast.  I take the Benfotiamine with another meal.  You can take your multivitamin with Benfotiamine at lunch.   Add a magnesium supplement, too.  Thiamine needs magnesium to make some important enzymes.  Life Extension makes Neuro-Mag, Magnesium Threonate, which is really beneficial.  (Don't take Magnesium Oxide.  It's not absorbed well, instead it pulls water into the digestive tract and is used to relieve constipation.)  I'm not a big fan of multivitamins because they don't always dissolve well in our intestines, and give people a false sense of security.  (There's videos on how to test how well your multivitamin dissolves.).  Multivitamins don't prevent deficiencies and aren't strong enough to correct deficiencies.   I'm happy you are trying Thiamax and Benfotiamine!  Keep us posted on your progress!  I'm happy to answer any questions you may have.

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?
