Continuous Celiac Symptoms

I was diagnosed by blood test in March '09, and have since been on a gluten free diet. As of a few days ago, no matter what I eat [gluten free pasta, cereal, etc] I get sick. This is the same food I've been eating for 10 months, so why am I all of a sudden getting sick again??

If I read your statement correctly, for months you've been gluten free and fine. Now you are suddenly displaying symptoms of being glutened.

Something has changed. Try looking a these things:

1. Your normal foods you eat may have changed it's ingredients, where it was made or someone purchased a different brand

2. You may have developed another food sensitivity, food/symptoms journal may help

3. You have changed some type of personal care product, toothpaste, mouthwash, breathe mint, lipstick....

4. You are using a different spice or butter

5. You kitchen and or cooking supplies has been contaminated

6. You are taking a new medication or supplement

7. You are drinking something you would never think has gluten in it

8. You could be sick

9. It could be a combination of foods together makes you sick-again the food journal will help

Let us know how you are doing and what you figure out.

Be careful with the gluten free products. I get some symptoms (abdominal pain, cramps, fatigue, body pain and shortness of breath when I eat them and I have been on a strict gluten-free diet for 1.5 years now. A couple years ago or so, The Chicago Tribune hired some specialists to test the amount of gluten on their labeled gluten-free products and found that they were containing over 200 ppm and were making people sick. Remember that with over 800 new products created in the last year only, companies are creating all these gluten-free products beacause they know there's a huge market out there! Read labels carefully and don't buy gluten-free products that say they are made in a facility that also processes gluten. I only buy gluten-free certified products or products that say that are made in a 100% gluten free facility. Try to eat natural gluten free foods like rice, potatoes, vegetables, fruits, meats, fish, poultry and only use salt for seasoning. Then, try adding a gluten-free product one at a time to see if you see any difference. In my case I feel much better if I don't eat gluten-free products...maybe I am too sensitive and my body still reacts to even 20 ppm...who knows? We are all different. Anyway, one more thing to consider is the amount per serving....if you are eating 4 gluten-free cookies and the serving size is 2 cookies, just eat 2....I would think that the 20 ppm is what the serving size contains...I asked this to a well known Dr. who's an expert in celiac and he said it is a good possibility and something I should avoid at least for awhile, while your gut is trying to heal...and same goes to eating too many gluten-free products throughout the day!

Can I just say WOW!!!!! Ahoresoul, you are awesome in your words. You really should give classes because so very many of us just don't hear your words. You become a wonderful reader being in the gluten free world, becasue things are always changing. Thank you so much for sharing your wisdom.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.
