Gluten Free Zucchini Bread

Gluten Free Zucchini Bread

(Adopted from “Betty Crocker’s New Cookbook”)

3 Cups Shredded Zucchini (about 3 medium sized ones)

1 2/3 Cups Sugar (or Splenda from the bag)

2/3 Cups Canola Oil

2 Teaspoons Vanilla Extract

4 Large Eggs

3 Cups gluten-free Flour Mix (see below)

2 Teaspoon Baking Soda

1 Teaspoon Ground Cinnamon

½ Teaspoon Ground Cloves

½ Teaspoon Baking Powder

1) Preheat Oven to 350

2) Grease bottoms only of 2 8x4x2 inch loaf pans

3) Mix zucchini, sugar, oil, vanilla, and eggs in large bowl.

4) Stir in remaining ingredients

5) Pour in to loaf pans, spreading to fill in to the sides as needed

6) Bake for 50-60mins, or until passes the tooth pick test.

7) Allow to cool for 10 mins then remove from pans and place on wire rack to cool.

That’s it!

gluten-free Flour Mix

2 ½ cups Rice Flour

1 Cup Potato Starch Flour

1 Cup Tapioca Flour

¼ Cup Corn Starch

¼ Cup Sorghum Flour*

2 Tablespoons Xanthan Gum

* I had to omit that, since was out and everything came out fine. I will probably not bother with it in the future.

NOTE: I did this with out a breadmachine, Not sure how to adapt it for one, maybe someone with more exerence with breadmachines can chime in?

Thanks for the recipe. I can 't wait for the zucchini to get large enough. I had just purchased my first bag of sorghum flour and now I'm ready. I love your sites and found the nature pics beautiful. May I have your permission to use them for puzzels? I love working puzzels on my computer and am always on the look-out for new pics to use. Thanks, granny

When we had Zuc's in our garden they were huge, only need one to make 2 loafs! heheh. If you get huge Zuc's you will have to adjust that 3 numberd. :D

The zuks won't stand a chance of getting too big in our garden. Hubby like to pick stuff too much. LOL

The puzzles are jigsaw puzzles and I love scenery with a light background. Thanks for your permission. It is just for my own entertainment. You had some great shots of everything and I like the astro stuff too. I am going to show hubby these. granny

      @dmallbee, about 8% of celiacs react to the oat protein avenin like they do to the wheat protein gluten. In addition, there are some cultivars of oats that apparently do actually contain gluten.

      I was diagnosed at 18 months old with celiac and lived without wheat, rye, oats, and barley as instructed by my doctor, Dr. Katz at Boston Children's Hospital in the 60's and 70's. I don't agree nor recommend doctors removing oats from restriction, certified gluten-free or not.  I have eaten certified gluten free oats and have had the usual reactions to gluten.  Please reconsider this with newly diagnosed patients.

      It's great to hear that the trip went well, and the general consensus I hear about gluten-free travel in Europe, including my own experiences, is that it is much easier done in comparison to traveling and eating gluten-free in the USA.

      Safely home from my recent trip to the UK. I had zero gut issues while traveling around this pretty country. Our tour leader was very good at making sure the 2 of us with gluten issues on our tour were well taken care of.  We often got our meals before the rest of the group and adaptations to the menu for us were well thought out and very tasty. I just wish restaurants here in the USA took as much pride in making food that everyone can enjoy. Many of the hotels and pubs we ate at had numerous options that were safe for us with wheat/gluten restrictions to eat.
