Hi!

Tomorow is my Birthday. I would like to make a cake for myself, but I don't know how. It must be gluten, nuts, bananas, orange zest, milk(casein- no chocolate, butter) free, low on sugar, and no eggs ( maybe egg whites).

I can make beautiful cakes, pastry, deserts, but they have everything in them what I can't have it. :angry::(:angry:

Please help!!!!

Hi!

I found a dairy free white Coconut frosting recipe here at Elana's Pantry , but from the comments it might take less agave nectar

it has Coconut milk, agave, salt, arrowroot, water, and coconut oil

She uses nut flour and eggs for the gluten free cakes, so we'd have to find another nut free version of cake that also doesn't have dairy.

if you can eat the Tofutti fake cream cheese vegan soy stuff, which actually tastes not so bad, you can use it as a cream cheese substitute for frosting by adding sweetener to it. See how that recipe above is cooking water and arrowroot together ? I wonder if a cooked paste of water and gluten free starch could be added in a very small amount to Tofutti, along with something to sweeten it, to make a frosting

you can also make cooked frostings out of beaten meringues and a cooked syrup

then there is this, Sugar free frosting with Pudding Mix, BUT, it can also be tweaked to be non dairy Open Original Shared Link by using a gluten free milk substitute, Tofutti cream vegan cheese, and sugar free instant pudding and whipped Cool Whip type topping. Do you know what instant sugar free pudding is ? It's just a starch and sweetener.

Over at the glutenfreegoddess there are recipes that can be converted to use egg replacer instead of eggs (I'm finding these by googling " gluten free sugar free vegan cake " or frosting )

It's got sorghum, coconut and tapioca flour, xanthan gum, baking powder **, baking soda, salt, nutmeg cinnamon, brown sugar, oil, coconut milk, eggs OR egg replacer , vanilla extract

If you didn't want to use brown sugar, you could use a few spoons of molasses for flavor, and a sugar substitute, but might have to decrease the liquids or add more gluten-free flour

you can also partially sub applesauce for sugar and/or eggs, for texture. Splenda can be used for baking to add sweetness, the amount for substitutes are on the box.

**If baking powder is a problem, you can use more baking soda instead, and a teaspoon of apple cider vinegar

here is how I would try this

the equivalent of 3 eggs

1/2 cup oil, such as olive or canola

the equivalent of 1 cup of sugar. (note, may have to adjust rest of recipe if using a liquid sweetener or a dry one)

1/3 cup of coconut milk or canned pumpkin

2 teasp. vanilla extract

1 tablespoon honey or agave

1/2 teas cinnamon

1 teasp pumpkin pie spice (mix of nutmeg clove ginger allspice 1/4 tea each)

2 cups of Gluten Free Flour mixture

Hi! Thank you for your replies. I have been planing to visit my allergologist because I wanted her to test me for corn, soy, eggs.

I didn't even considered other things. It is good that you had mentioned them.

coconut - yes

coconut milk from a can, organic, with guar gum - I don't know, propably yes.

coconut oil - I never had it. Maybe, but only very small amount, like one Tbsp. in all cake.

that Tofutti vegan cream cheese, which is soy based - I had it, but didn't like the taste. In a cake the taste wouldn't be the issue.

hemp milk, gluten free- I don't know, I didn't try it.

corn - still yes

tapioca yes

rice -yes

potato starch yes

arrowroot powder or starch - I don't know

garbanzo bean flour -I don't know, I have at home, but I didn't do nothing with it yet.

xanthan gum - Yes, I had it in the gluten-free products.

sorghum -same as xanthan gum

amaranth - also I had it in products

olive oil - yes, but very little

vanilla extract - yes

cinnamon -yes

pumpkin - yes

pure applesauce - yes

lemon peel or juice - just juice, not peels(I will start cought like craizy- astma) is it all citrus ?

molasses - I don't know, what you mean?

ginger - I think so.

About the eggs : I can't eat any fat right now, but I do in very small amounts. Eggyolk is out for me. I think that egg white is ok.

It's my Birthday and I just want to have something sweet for change.

Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

      Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
