I got Carol Fenster's book, 1000 Gluten-Free Recipes.

It has a recipe for Pumpkin Spice Mini Cupcakes.

The recipe calls for 1 tsp of lemon juice. I thought that was odd and kind of a large amount. I have never heard of lemon juice in pumpkin pie or cake before.

Anyway, the directions never said to add the lemon juice. I was wondering if it was a misprint. The recipe had baking powder as opposed to baking soda, so I didn't think it needed the lemon juice.

So I made the recipe without the lemon juice, and everyone really liked them. I was wondering if anyone else has made this recipe or something similar. Is it supposed to have the lemon juice? How do I find out?

Not quite sure. I would recommend you email the company at info@SavoryPalate.com and ask them. That appears to be Carol Fensters Company that she runs all of her books through. On their website, it lists many corrections for the book, but that recipe does not have a correction noted. Good Luck.

I sent an email - will give that a couple days. If not, there was phone number listed somewhere (I forgot if it was the book or website).

I was looking for something very specific (a pumpkin dessert) and was very pleased with the one I found.

Thumbing through the book, I think it looks fantastic - has every type of food covered. The only problem is that my son is a very "plain meat and potatoes" type of kid, so not very adventuresome. He won't eat pasta, casseroles, or hardly anything with sauce. So the cookbook had lots of things that I thought looked great, but since my son is the only Celiac in the family, I know better than to spend a lot of time and effort on. Same thing with desserts - if it does not have chocolate as a key ingredient, he is not too interested. (But he DID like the pumpkin cupcakes!)

Was there any type of milk? (rice milk)

Adding lemon juice or vinegar to the milk can turn it more like a buttermilk texture. or

It may be used to replace an egg by adding vinegar to baking powder.

The recipe has no milk or milk substitute. It has FOUR eggs. It's basically a little flour, pumpkin, pumpkin pie spices, eggs, sugar, xanthan, and baking powder.

I can't figure a reason for the lemon juice, and the instructions don't tell you to add it so I think it's a misprint.

It also mentions having 1/2 cup powdered sugar for dusting, but does not say to use that either. After they cool, you frost them with a rich cream cheese icing, so why would you need to dust them?

Anyway, I made them without the lemon juice and without dusting, and they were really good. I plan to make them again this weekend for a Halloween party, and don't want take a chance on messing up a good thing!

If I get a reply from my inquiry I'll post it.

I have that book... it has quite a few errors in it. Her flour mix is great and I use it for most of my baking. But I've caught a few errors and a couple of the recipes are off. Overall, great book, but if something doesn't turn out right, don't automatically think it was your fault. :ph34r:

Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
