Last night I was chatting with my mom about Christmas dinner. She asked "What on earth can we eat now?" Ummmm...lots...

I told her that we could still make our traditional green beans and bacon dish as well as the sweet potato souffle(I am not sure why it is called that since it is not a souffle.) We could do a standing rib roast, turkey, ham(if we check ingredients), pork roast...whatever kind of meat. It would be easy to make a soup from scratch, salad, etc.

She had no idea that we could still eat any of those items. I am not sure what she thought we would be eating on day to day basis if she didn't think we could eat much.tongue.gif

In all fairness to my mom, she is ready to jump in and make this work. She just didn't know where to start.

I hear ya....it's amazing what some people think it is we eat--and don't eat! I've heard things like--"wow, you can eat bacon??" :lol: My husband's new boss asked him if he ate "my food" and if it was "bland". :P

Your mom sounds great, though, and I'm sure that before long she'll be a pro at gluten-free cooking :D

I've had so many people say to me "What can you eat?" LOL It's like a gluten free diet turns us into refuges and we have to scrounge for food. I told my family about it and 50% freaked. I calmly said there are a lot of foods out there that don't contain gluten. Meat, potatoes, rice, all vegetables, fruits, spices etc... I told them I wouldn't trust processed foods/packaged foods unless they said gluten free on them. Some of them still were in freaked out mode.. OMG you can't eat pizza or burgers or bread? LOL I said hey you shouldn't be eating that stuff all the time anyway. The conversations were priceless and a good indicator of our society here in the US and how reliant most people are on processed foods and take out. I went to a family get together last week and brought gluten-free chocolate chip cookies that I made at home and didn't tell anyone they were gluten free. They were all eating them and raving about them and I took one and took a bite and they all gasped! One cousin said I thought you couldn't eat that anymore. I said I can eat these because I made them with a gluten free flour mix I made.. I'm such a brat.. but I have to admit the look on their faces when I took a bite out of that cookie was again priceless. LOL :P

My surprise is that I'm the ONLY one in my whole family (and all 3 of my daughters) that's been diagnosed! I suspect my older sister has symptoms, but we're the only completely gluten free people in my whole extended family.

I'm the only one in my family too. The rest of them with symptoms choose to ignore it because god forbid they should change their eating habits. I said to my brother recently when he was complaining about his stomach hurting and diarrhea after dinner... well you know the solution you just have to admit it... he said back to me "I don't have that crap" ... well buddy we come from the same parents so likely he has the gene too. good grief why would some people rather suffer than find out what's wrong? I have a cousin too that complains about her stomach and pain and bathroom stuff and when I suggested she get tested for this she poo poo'd me and said oh I don't have that. Well you know what I'm done talking to these people about their woe's... if they won't even try the gluten free for a week (I felt better in a few days and gradually get better every day after a month) then they are just looking for sympathy and being pathetic and I told them both that... :P

      They may want to also eliminate other possible causes for your symptoms/issues and are doing additional tests.  Here is info about blood tests for celiac disease--if positive an endoscopy where biopsies of your intestinal villi are taken to confirm is the typical follow up.

      In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease--and you are above that level. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! May I ask why you've had so many past tTg-IgA tests done, and many of them seem to have been done 3 times during short time intervals?

      @JettaGirl, "Coeliac" is the British spelling of "celiac". Same disease.

      This may sound ridiculous but is this supposed to say Celiacs? I looked up Coeliacs because you never know, there’s a lot of diseases related to a disease that they come up with similar names for. It’s probably meant to say Celiacs but I just wanted to confirm.

      I was told it was to see how much damage has been caused. But just told CT with contrast not any other name for it.
