Tuesday'-Whatcha Eating Today Celiacs?

We're on day 2 of the "Whatcha Eating Today Celiacs?" trial. Lets see if this takes off. I had a blood draw today to check for more food allergies. I forgot to have him check for coffee and chocolate allergies.....DARN! I may be able to call tomorrow and have it added.

Breakfast- Coffee, cream, and sugar

Breakfast- 2 slices of Udi's toast with butter

Lunch-protein shake (Mootopia milk with whey protein) Larabar (apples and cinnimon)

snack- 4 gluten-free Pamela's ginger snaps

Dinner-3 ounces of roast beef, 8 baby carrots and 1 small red potato

2 cups coffee with sugar free nestle creamer. 1 egg spinach omelette w/ mozzarella & curry powder.

1/2 Redwood hill farms Goat Yogurt Vanilla w/ 1 tbsp. gluten-free rolled oats & 1/5 of a banana.

3 brazil nuts.

frozen mocha (& a lactaid ;) )

the last few sips of my green smoothie from yesterday & a couple of rice crackers.

Tinkyada spinach spaghetti w/ canned Red salmon, peas, EVOO, parm/romano, green onions, tomatoes, & balsamic

& decaf iced tea

& will probably get out some Enjoy Life choco chips in a sec.

Breakfast - Apple

Lunch - Strawberry and Banana Smoothie

Snacks - nacho's gluten-free of course, 2 of pamala's peanut butter chocolate chip cookies

Dinner - Steak, sauted portabello mushroom, baked potato

Dessert - Betty Crocker gluten-free Brownies :D yum

Thanks for posting! It seems that despite our problems with wheat and other foods, we eat very well!!! Your menus look yummy!

I won't be posting tomorrow, I have to go get and ultra-sound and labs. I might need my gallbladdder out, I thought it was another food allergy, but maybe it's my Gallbladder. The doc seems to think so! I'll let y'all know....

Yesterday

Breakfast - 2 scrambled eggs topped with cheddar cheese and 3 pieces of bacon

Lunch - peanut butter and jelly sandwich

Snack - watermelon

Dinner - Mrs. Leepers beef lasagna, but i added corn and then topped it with cheddar cheese and crumbled frito's low sodium corn chips

Dessert - betty crocker brownie again :lol:

First breakfast - Non-Fat Greek Yogurt with Blueberries

(Work out)

Second Breakfast - (1) Low fat chicken sausage, egg white omelet with veggies, (1) piece of gluten free bread

Mid morning snack: Fuji apple with almond butter + protein shake

Lunch: Pork tenderloin medallions (leftover from day before), gluten-free brown rice, steamed frozen veggies

Mid day snack: Fresh strawberries with non fat yogurt

Dinner: Pan seared cod fillets (thawed from frozen) with black beans & steamed broccoli.

Snack before bed: Low fat cottage cheese + small protein shake

Bedtime...ZZZZZZZZZ

I think our wheat allergies and Celiacs force us to eat healthier diets than the average person. Thanks to all who posted. I love reading the replies.

Psssss.... I have a Chocolove Dark Chocolate bar with Sea Salt in my desk drawer and nosh on a square here and there throughout the day to help with my sweet tooth. ;)

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
