Vegetable Side Dishes- Need Ideas

Hi everyone- I am in desperate need of vegetable side dish ideas. I feel like I am in a rut with them. I can't do salad or raw veggies yet so my options are limited and I would like to learn to cook some new veggie dishes with vegetables I really haven't worked with before like swiss chard, rhutabaga, etc. If any of you have any simple recipes to share I would really appreciate it. Or a good cook book suggestion that contains lots of veggie ideas. My energy level is not high so the simpler the better right now.

I really enjoy making sweet potato french fries - I use nonstick cooking spray, top with some spicy seasoning, and bake them in my oven, so they're really healthy. There are tons of recipes for them online.

Roasting or grilling veg really brings out their sweetness (i.e. red peppers, tomatoes, carrots, all root veg). I also love to make several purees with carrots, parsnips, peas, roasted butternut squash, etc. Have you tried spaghetti squash with melted butter, sage leaves and Parmesan?

I also marinate mushrooms for a bit of a change. Have you tried kale chips (in the oven)?

Some of my favourite veg side dishes include the following (let me know if you're interested in any and I will post the recipes):

- sweet and sour roast vidalia onions

- fava bean saute with marjoram and feta

- marinated grilled leeks

- stuffed roasted artichokes with chile and mint

- sauteed peas with garlic and sesame

- steamed new potatoes with chive oil

- sauteed baby spinach with lemon zest and cream

- artichoke ragout with garlic, saffron and orange zest

- two-pea saute with basil and pecorino

- steamed green beans with tarragon dipping sauce

- grilled sweet corn with maple-cayenne butter

- zucchini "pasta with fresh toato sauce

- sauteed yellow pear tomatoes with arugula pesto and feta

- poblano chiles stuffed with black beans and summer squash

- marinated summer veg grilled on rosemary skewers

- creamed corn with chipotle chiles

- potato celeriac pancakes

- stir fried broccoli with cashews and soy

- roasted beets with orange and herbed goat cheese

- wasabi-chive mashed potatoes

- sauteed broccoli rabe with garlic, anchovies and red pepper flakes

- roasted acorn squash with chipotle and cilantro

- caramelized cauliflower with honey and smoked paprika

- shell beans with butternut squash, bacon and sage

- mushroom and potato gratin with thyme and parmesan

- spicy roasted potatoes with cool yogurt dipping sauce

- braised kale with white beans and smoked ham

- vinegar-glazd brussels sprouts with chestnuts and walnut oil

- gingered winter squash and pear puree

- braised mustard greens with pancetta and lemon

- grilled radicchio with salsa verde

- braised winter veg with coconut and red curry

- parsnips and sweet potatoes with hazelnuts and brown butter

- wok-seared bok choy with chile oil and garlic

I like purees of cooked vegetables for iffy stomachs. For example: steam up some carrots and cauliflower and then puree with some seasoning. I've a recipe posted if you want the link. (PM me for actual recipes/links).

You can do the same thing with a mix of root vegetables, too.

Winter squash with sweet potato, sage, cheese (optional), and maybe garlic.

Creamed turnips are very nice, a little decadent.

Roasted cauliflower with lemon and mustard.

Sauteed cabbage.

Vegetable soup.

WOWZERS Love 2! You sure can cook.....Could you please post the following recipes? (They all sound good but I will pick the ones that most light my fire for now)

1. Parsnips and sweet potatoes with hazelnuts and brown butter

2. Kale chips

3. Marinated leeks

5. Roasted Beets with orange and goat cheese

If this is too many to post feel free to do just do one or two....do you have a certain cook book or web site you use? or do you make them all up yourself?

My favorite veggie sides are:

*Roasted brussel sprouts...use a lot of oil and let them roast till the edges get slightly crispy. Season with your favorite seasoning.

*Asparagus...with some olive oil, salt, and fresh herbs wrapped in parchment paper packages with the edges twisted shut. Bake at 300 for a loooong time (1-2 hours?) and they are so flavorful.

*Sunchokes (Jerusalem artichokes) are really good either as chips, sliced thin and fried in oil till slightly crisp and seasoned with salt and rosemary, or steamed and mashed with potatoes and carrots. They are super nutritious.

*Greens (kale, collards, mustard) cooked in a little bacon grease, and add a little water to the skillet to cook the greens thoroughly. Serve with chopped bacon, a little brown sugar and sprinkle of apple cider vinegar (This got my kids so into eating greens...they always yell "More kale please!").

*Any veggies I have, stir-fried. Simple and always good. I use some gluten-free soy sauce or fish sauce and some garlic.

*Steamed or boiled beets, cold with chopped onion and cucumber, a dressing of sour cream or plain yogurt, apple cider vinegar, a little honey, salt, and dill.

*Roasted fennel bulbs. They really don't need anything fancy, imo. They are good just plain.

But when I'm tired, I just stir-fry. Or make the greens minus the bacon.

Here's a good one

chop up one yellow squash and one zuccini

put them in a frying pan and add one can of sweet corn (drained)

cook those with a good amount of olive oil and mrs. dash seasoning

when you think they are done top it with crunched up pieces of bacon and grated cheddar cheese.

keep cooking until the cheese is melted (wont take long)

It is sooooo good!

      I'd be very cautious about accepting these claims without robust evidence. The hypothesis requires a chain of biologically unlikely events: Gluten/gliadin survives the cow's rumen and entire digestive system intact. It is then absorbed whole into the cow's bloodstream. It bypasses the cow's immune system and liver. It is then secreted, still intact and immunogenic, into the milk. The cow's digestive system is designed to break down proteins, not transfer them whole into milk. This is not a recognized pathway in veterinary science. The provided backup shifts from cow's milk to human breastmilk, which is a classic bait-and-switch. While the transfer of food proteins in human breastmilk is a valid area of study, it doesn't validate the initial claim about commercial dairy. The use of a Dr. Osborne video is a major red flag. His entire platform is based on the idea that all grains are toxic, a view that far exceeds the established science on Celiac Disease and non-celiac gluten sensitivity. Extraordinary claims require extraordinary evidence, and a YouTube video from a known ideological source is not that evidence."

      Some backup to my statement about gluten and milk. Some background.  When my son was born in 1976 he was colicky from the beginning.  When he transitioned to formula it got really bad.  That's when we found the only pediactric gastroenterologist (in a population of 6 million that dealt with Celiac Disease (and he only had 14 patients with celiac disease), who dianosed by biopsy and started him on Nutramegen.  Recovery was quick. The portion of gluten that passes through to breastmilk is called gliadin. It is the component of gluten that causes celiac disease or gluten intolerance. What are the Effects of Gluten in Breastmilk? Gliaden, a component of gluten which is typically responsible for the intestinal reaction of gluten, DOES pass through breast milk.  This is because gliaden (as one of many food proteins) passes through the lining of your small intestine into your blood. Can gluten transmit through breast milk?

      I don't know of a connection. Lots of people who don't have celiac disease/gluten issues get shingles.

      I’m 43, just newly diagnosed with a horrible case of shingles last week . They are all over my face , around my eye, ear , all in my scalp. Lymph nodes are a mess. Ear is a mess. My eye is hurting and sensitive. Pain has been a 10/10+ daily. Taking Motrin and Tylenol around the clock. I AM MISERABLE. The pain is unrelenting. I just want to cry.   But Developing shingles has me a bit concerned about my immune system which also has me wondering about celiac and if there’s a connection to celiac / gluten and shingles; particularly since I haven't been 💯 gluten free because of all the confusing test results and doctors advice etc., is there a connection here? I’ve never had shingles and the gluten/ celiac  roller coaster has been ongoing for a while but I’ve had gluten off and on the last year bc of all the confusion
