Found New Recipe For Chili-Mac

My younest son Ishmael use to like to eat chili-Mac before he was diagnosed with Celiac Disease. Now, he doctor put him on a gluten-free diet. He has been so lost without his favorite food. So, I found out this morning that Bush's Beans makes a gluten-free chili. I checked with several sources and included the Bush's Beans Company as well. So, if you mix Annie's Creamy Deluxe Box of gluten-free cheese and macaroni and Bush's Gluten-free beasns together, you get gluten-free Chili-Mac just like he use to eat. When, I first researched it, everyone told me there is not such thing as gluten-free Chili-Mac sold on the market today. Well, it seems to be doing the trick. You can find just about anykind of food if you look hard enough. Key is to experiment with different food groups and come up with new or old dishes accept, in gluten-free form.

Did he eat it? That sounds yummy and reasonably healthy. My 15 year old ( not picky) loves my chili mixed with plain macaroni.

I figure the tomato sauce, beans & meat are healthy. If this works, you might be able to hide little tiny, teeny pieces, microwaved until mushy, of carrots in it. But not the first day! :)

I was happy to hear that you are getting some medical help for him.

      @fatjacksonthecat I have been doing some digging about the topic of nicotine and celiac.  I came across many studies that showed that the nicotine patch helped many with long covid and chronic fatigue syndrome.  I have a son who was diagnosed with celiac and his symptoms are severe when he is glutened.  He shows a lot of neurological inflammation and suffered with fatigue, brain fog, depression, anxiety and insomnia. There have been studies revealing that nicotine smoke actually masking celiac symptoms.  I also read that microdosing with a nictoine patch prevents one from addiction.  We are currently trying this out and so far it has lifted the brain fog and helped with anxiety and mood.  One of the studies I have read showed that it's not so much the dose, but the length of time a person is on the patch that showed improvements.  Many showed significant improvement as early as week 3 and continued through week 12.  We are taking 3 day breaks in between to make sure we don't down regulate the nicotine receptors.   How have things been for you?  Are you still chewing nicotine gum?  Perhaps, try the patch?  And how long did it take to ease up on your symptoms when glutened?

      @KathyR37, I would suspect that in addition to gluten intolerance, you have other food intolerances/sensitivities. This is very common in the celiac community. The most common offenders are oats, dairy, soy, corn and eggs with dairy and oats being the big two. Have you considered this? Have you tried keeping a food diary to detect patterns?

      thank you for your advice.   I have always taken them and I use Stonehedge because they are in a glass bottle, but don't have to be refrigerated.  I also like they are 3rd party tested and state gluten free. But you never know if something better has come alone over the years.

      Thank you for your response. I have already learned about the info you sent but i appreciate your effort. I am the only one in my family cursed by this disease. I have to cook for them too. I make sure that my utensils are free of gluten and clean after using them for other food. I use non-porous pots and pans and  gloves when cooking for them. One huge problem I have is a gag reflex out of this world and if something doesn't taste good it is not going down. Most commercially made breads and such taste like old cardboard.Pastas are about the same. I did find one flour that I like and use it regularly, but it is so expensive! All gluten free food is way more expensive. I only eat twice a day because I cannot afford to buy all that. We live on a very low income so my food purchases are quite limited.
