B) Z Tejas Gluten Free Menu (from Corporate office) B)

Fish Tacos*

Seared catfish (*must tell server to leave out the blue tortilla strips) with avocado and cucumber slaw in a tortilla (*must substitute a corn tortilla for the flour tortilla).

Wild Mushroom Enchiladas*

Sautéed wild mushrooms, avocado salsa and jack cheese rolled into two corn tortillas. Topped with an ancho sauce and sour cream. Served with our Southwestern rice and black beans.

Roasted Pork Enchiladas*

Shredded pork roast with mole sauce and jack cheese rolled into two corn tortillas. Served with Southwestern rice and black beans.

Z Salad*

Mixed greens, colored peppers, roma tomatoes (*must tell your server to omit the Navajo croutons). With a choice of spicy basil-parmesan, tomato basil, sesame ginger, or lime vinaigrette dressing only (each of these dressings contain red-wine vinegar).

Tuna Salad*

Seared Ahi tuna over a bed of missed greens served with a lime vinaigrette (red-wine vinegar? white vinegar?), tomatoes, crispy capers and a zap of wasabi.

Santa Fe Chicken Enchilada*

Smoked chicken layered in three corn tortillas (must tell your server to omit the red chili sauce which has a roux base).

Grilled Ruby Trout

Fresh filet grilled and topped with avocado relish. Served with wild rice and mixed vegetables.

Voo Doo Tuna*

Blackened Ahi tuna with black peppercorn vinaigrette (*must omit the spicy soy mustard).

Z Salmon*

Fresh king salmon brushed with a miso glaze (*must omit the butter sauce) and served over green beans and a mashed potato cake.

Gorgonzola New York Strip*

Grilled New York strip (*must omit sauce). Served with green beans and a seared mashed potato cake.

Since our food producers change ingredient contents, and cooks can be creative, always double check with your server. If an item you want is not listed here, it has been omitted due to flour roux, wheat gluten, m.s.g., gluten base or cross contamination. Vinegar has been noted. FYI – our rice is cooked in water and our moles shown here are cooked with vegetable oils.

      Hello, just popped in my head to ask this question about medications and celiac? I have always had refurse reaction to meds since I can remember  of what little meds my body is able to tolerate. I was taking gabapentin 300mg for a week,  in past I believe 150? Any ways it amps me up not able to sleep, though very tired.However I did notice it helped with my bloating sibo belly.I hate that my body is that sensitive and medical doesn't seem to take seriously. Im STILL healing with my skin, eye, and now ms or meningioma ( will know in April  which)and dealing with this limbo nightmare. I did write my name, address ect on the reclamation but im not tech savvy and not sure if went through properly. I called my city representative in Stanislaus County and asked if theres a physical paper i can sign for proclamation for celiac and she had no clue about what I was saying, so I just said I'll go back on website.

      I'm not saying that some celiacs won't need it, but it should be done under a doctor's supervision because it can cause lots of problems in some people.

      I also noticed I get debilitating migraines when I smell gluten, wheat and its not taken seriously when it affects one in every way.Im still begging to properly be heard.I also noticed tolerance level is down the drain with age and life changes. I have been told by incompetent medical that im not celiac or that sensitive. Diagnosed in 1994 by gi biopsy gluten-free ever since along with other lovely food allergies. Prayers

      trents:  Why some can tolerate european bread but not american bread.     I take 600 mcg a day.  Right in the middle of the safe range.   Groups at Risk of Iodine Inadequacy Though though the NIH does not specifically list Celiac Disease in this group, they state: "Iodide is quickly and almost completely absorbed in the stomach and duodenum. Iodate is reduced in the gastrointestinal tract and absorbed as iodide [2,5]."  That would certainly include malabsorption of Iodine due to Celiac Disease with resultant Iodine Deficiency.
