I just made the Bob's Red Mill gluten free brownies with fudge topping. Cheating a bit since it's not from scratch, but damn those things make my eyes roll back in my head. A word of caution- they do mean to melt the chocolate and cream on low heat. As in 1 or 2. Found that out the hard way. Luckily the pot was stainless and thus cleanable. Use ghiradeli or godiva chocolate for the fudge and you will just die (in a good way).

One of my favorite desserts is Open Original Shared Link from the King Arthur website. I've made it several times but only when I'm providing dessert for friends. It is very rich and serves 12.

Another one is flourless peanut butter cookes (using just 3 ingredients):

1 cup peanut butter (either smooth or chunky)

1 cup sugar

1 egg

I use a cookie scoop (looks like a mini ice cream scoop), criss-cross with a fork and then bake at 350° for approx. 10 min. I like to line my baking sheet with parchment paper.

I also like Betty Crocker gluten-free brownie mix and add additional mini-chocolate chips.

This weekend I'd like to make apple crisp (no recipe yet as I haven't made it since going gluten-free).

Since it's fall, I'm also thinking pumpkin something-or-other.

A good place to search for recipes is Open Original Shared Link or Open Original Shared Link. Just do a search for gluten-free and it'll bring up hundreds, if not thousands, of recipes for just about anything you'd like to make.

Great gluten-free angel food cake is actually quite simple to make. I think I posted a recipe on here before - if not I will find it. It really is very good.

My favourite recipes are usually naturally gluten free such as:

creme brulee

creme caramel

pavlova (large or individual ones)

dacquoise

semifreddo

panna cotta

Eton Mess

Am working on profiteroles with spun sugar (croquembouche).

Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

      Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
