What Could've Made Me Feel So Bad?

I've only been gluten free for a week. My usual symptoms (bloating, distention, heartburn, headache, haziness, exhaustion) have been improving. My celiac tests have thus far been negative but I'm trialing gluten-free to see if I see improvements. This morning DH made me gluten-free waffles that I topped with smart balance and maple syrup. W/in 10-15 mins I was visibly distended and nauseous. I took a phazyme and it helped. Last night I also had a similar reaction only I wasn't nauseated after dinner and dinner was pork, sweet potato and broccoli. I know the gluten-free is still so new and it'll take time to feel better (if gluten-free does work for me) but the reaction this morning was so immediate that I can't help but think it was something I ate for breakfast. Ideas?

Well, now that you ask I'm guessing there's a high chance of CC as the rest of the household isn't gluten-free (plastic mixing bowl, plastic measuring cups, etc). I guess I wasn't thinking that I could be that sensitive to CC, especially if I'm not celiac. But that's gotta be it. Bah humbug.

What about the waffle iron? Was it used for regular gluteny waffles in the past?

Yup, old waffle iron. W/out a celiac diagnosis I wasn't ready to ditch old kitchenware just yet...wanted to give the elim diet a try first to see if gluten was really my issue. As captaincrab said, I think I've got my answer.

The pork was cooked on stainless steel, sweet potato was microwaved on a clean plate, broccoli cooked in a non-stick pot that's only used for veggies. Reaction definitely wasn't like this mornings...just bloated w/ some gas pain (I get that often on a very empty stomach) but the heartburn really flared.

The smart balance has a very small amount of whey (pretty far down the ingredient list), but I've used that other times this week w/out issue. I don't seem to have a problem w/ soy either...use soy milk creamer daily, eat edamame, had tofu the other night...no issues.

I can't blame you for not ditching old kitchen equipment yet if you don't know if you have celiac or a gluten intolerance or something else. But if you plan to get tested, you really do need to stay on a full gluten diet.

That said, our bodies can be pretty wonky at first and we can have a very difficult time trying to pin down our reactions. And we can also react to something we've eaten a couple of days (or more) ago. I'm still puzzled as to why I react at times and I always want to blame it on gluten, which may not be the case at all.

ETA: Ooops...I should have read your first post that you were doing the gluten-free diet as a trial after having a negative test result. Sorry.

Early on it could be anything (I'm referring to dinner), your body is adjusting 200 things right now....

I'd concentrate on getting the leftover gluten out of the kitchen and take it from there.

If you notice repeated problems with broccoli or pork then worry about it.

Btw, for me it would be the pork....they put preservatives in most pork these days, especially loins. They get me. I don't think it's gluten, but my body doesn't like them.

I'm in pretty much the same position as you and I seem to have a problem with sweet potatoes. I'm guessing it's the starch. I also got very distended adn uncomfortable after eating some gluten free bread that had potato starch in it. It could be something else, but maybe you are having problems digesting starch right now? You could check the waffle mix and see if it has additives that you might be reacting to.

But I'm still having a lot of problems with a lot of things, so could be totally wrong here.

It could be multiple food intolerances. At first when I went gluten free, I was still feeling sick ALL the time! then I realized that I am sugar intolerant. This mean any type of fructose. Cane sugar, maple syrup, honey, agave etc. So I cut that out too. I didn't even hardly eat fruit for awhile! Then recently I was still feeling gluted sometimes, and I realized I'm one of the 13% of celiacs that are Oat intolerant. So out with the oats. In the early days when you are trying to figure everything out, it can be daunting. But never give up hope! You will find the answer, just keep persevering. also, as others have said, never underestimate the power of contamination. I have on many occasions and I certainly have paid dearly for it. It happened again tonight. For dinner I had leftover salmon and white rice with smart balance. I had both of these on Monday night w/out problem. About 20min after dinner I was visibly distended that I looked pregnant and the bloating was so uncomfortable that I wanted to rip my skin open to make more room for my stomach to expand. The feeling lasted about 1hr and then was gone but I still looked distended. Of course I only had one small piece of fish and about 1/2C rice so I was uncomfortable and starving at the same time. It was miserable.

Since I had this exact meal just 2 days ago the only thing I could think of was cc. When the meal was first cooked DH and DDs had a flavored lipton rice. Perhaps DH used the same spoon to put away the leftovers? I also reheated the meals tonight and put the girls food in the microwave first which had gluteny foods and then followed up with my foods. But I was careful to use different utensils and nothing that touched their food touched mine.

I just wish it was clearer that A causes B. All of my blood tests have been negative so I'm trialing gluten-free and when a night like this happens with no obvious gluten I can't help but wonder if I'm on a wild goose chase and headed to a dead end. Maybe it's not gluten at all???

      This happened to me as well. What’s weirder is that within a couple hours of taking paxlovid it subsided. I thought maybe I got glutened but after reading your post not so sure.

      Hi Tiffany. Thank you for writing your dituation and  circumstancesin such detail and so well writte, too. I particularly noticed what you wrote about brain for and feeling like your brain is swelling and I know from my own experiences that's how it feel and your brain really does swell and you get migraines.    Way back when I was in my 20s I read a book by 2 MD allergist and they described their patient who came in complaining that her brain, inside her cranium, was swelling  and it happened when she smelled a certain chemical she used in her home. She kept coming back and insisting her brain actually swelled in her head. The Drs couldn't explain this problem so they, with her permission, performed an operation where they made a small opening through her cranium, exposed her to the chemical then watched as she brain did swell into the opening. The DRs were amazed but then were able to advise her to avoid chemicals that made her brain swell. I remember that because I occasionally had brain fog then but it was not a serious problem. I also realized that I was becoming more sensitive to chemicals I used in my work in medical laboratories. By my mid forties the brain fog and chemicals forced me to leave my  profession and move to a rural area with little pollution. I did not have migraines. I was told a little later that I had a more porous blood brain barrier than other people. Chemicals in the air would go up into my sinused and leak through the blood brain barrier into my brain. We have 2 arteries  in our neck that carry blood with the nutrients and oxygen into the brain. To remove the fluids and used blood from the brain there are only capillaries and no large veins to carry it away so all those fluids ooze out much more slowly than they came in and since the small capillaries can't take care of extra fluid it results in swelling in the face, especially around the eyes. My blood flow into my brain is different from most other people as I have an arterial ischema, adefectiveartery on one side.   I have to go forward about 20 or more years when I learned that I had glaucoma, an eye problem that causes blindness and more years until I learned I had celiac disease.  The eye Dr described my glaucoma as a very slow loss of vision that I wouldn't  notice until had noticeable loss of sight.  I could have my eye pressure checked regularly or it would be best to have the cataracts removed from both eyes. I kept putting off the surgery then just overnight lost most of the vision in my left eye. I thought at the I had been exposed to some chemical and found out a little later the person who livedbehind me was using some chemicals to build kayaks in a shed behind my house. I did not realize the signifance  of this until I started having appointments with a Dr. in a new building. New buildings give me brain fog, loss of balance and other problems I know about this time I experienced visual disturbances very similar to those experienced by people with migraines. I looked further online and read that people with glaucoma can suffer rapid loss of sight if they have silent migraines (no headache). The remedy for migraines is to identify and avoid the triggers. I already know most of my triggers - aromatic chemicals, some cleaning materials, gasoline and exhaust and mold toxins. I am very careful about using cleaning agents using mostly borax and baking powder. Anything that has any fragrance or smell I avoid. There is one brand of dishwashing detergent that I can use and several brands of  scouring powder. I hope you find some of this helpful and useful. I have not seen any evidence that Celiac Disease is involved with migraines or glaucoma. Please come back if you have questions or if what I wrote doesn't make senseto you. We sometimes haveto learn by experience and finding out why we have some problems. Take care.       The report did not mention migraines.

      Hi Jmartes71 That is so much like my story! You probably know where Laytonville is and that's where I was living just before my 60th birthday when the new Dr. suggested I could have Celiacs. I didn't go on a gluten challange diet before having the Celiac panel blood test drawn. The results came back as equivical as one antibody level was very high but another, tissue transaminasewas normal. Itdid show I was  allergic to cows milk and I think hot peppers. I immediately went gluten free but did not go in for an endoscopy. I found an online lab online that would do the test to show if I had a main celiac gene (enterolab.com). The report came back that I had inherited a main celiac gene, DQ8, from one parent and a D!6 from the other parent. That combination is knows to sym[tons of celiac worse than just inheriting one main celiac gene. With my version of celiac disease I was mostly constipated but after going gluten-free I would have diarrhea the few times I was glutened either by cross contamination or eating some food containing gluten. I have stayed gluten-free for almost 20 years now and knew within a few days that it was right for me although my recovery has been slow.   When I go to see a  medical provide and tell them I have celiacs they don't believe me. The same when I tell them that I carry a main celiac gene, the DQ8. It is only when I tell them that I get diarrhea after eating gluten that they realize that I might have celiac disease. Then they will order th Vitamin B12 and D3 that I need to monitor as my B12 levels can go down very fast if I'm not taking enough of it. Medical providers haven't been much help in my recovery. They are not well trained in this problem. I really hope this helps ypu. Take care.
