OK - I'm kinda getting bored (and, really, so is my family) with potatoes or rice. What are some other good side dish ideas? I usually always serve a fruit and a vegetable in some form. Just getting bored w/the same ole/same ole.

Oooo... the "make up food game"! I love this one!

I'm going to include rice and potatoes here, but the focus is changing flavors/textures:

1. Pumpkin Rissoto

For those of you who crave the taste of pasta. Buy spaghetti squash, poke holes through it to let out steam and micro. it. When soft, cut in half, remove seeds. Take a fork and scrape the squash. It will look like spaghetti. Put in a bowl and toss with salt, pepper, butter and fresh graded parm. cheese. -- really good.

Golden Crinkles are very good.

It may not be a "gourmet meal", but I like it. :P

But, I would include some fruits also, since the fries aren't the healthiest food in the world.

It's really good with regular pasta sauce too. I made up a big batch of a really hearty, meaty marinara sauce and poured it over spaghetti squash and brought it over to a friend's house for dinner once... everyone thought it was a very tasty dip for chips!! Lol! But they also loved it all the more when they found out it was healthy! :-)

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

      Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
