Potlucks can be evil.

So I had the grilled chicken and the hotdogs (without the bun) all good. Salad of brown rice, veggies and cheese all good.

The enchiladas looked great and were tasty. Then Im sitting next to the lady who made them as she starts to talk about how she just loved these "multi"-grain tortillas

Yes, I agree that potlucks are downright evil! Even when I'm VERY careful, I sometimes end up getting glutened. A word of caution about enchiladas: only certain brands of enchilada sauce are gluten free, and even one brand offers gluten-free varieties for the mild and medium-spicy but its spicy version is NOT gluten free. Also, sometimes a cook will use certain canned chilis that aren't gluten free, and studies have shown (and have been borne out by my gluten-free friends and me) that eating both peppers and gluten at the same time causes a more severe reaction. I have NEVER been so sick as when this has occurred. Always avoid dishes that have spicy peppers or enchilada sauce.

The only way I'd ever feel comfortable eating food someone else made is if that person actually understands exactly how bad and dangerous it can be for me to have gluten. I did have a muffin at a church breakfast. I felt safe because while she has no specific problem with gluten the women has so many food allergies that she takes the idea of cross contamination very seriously and understands how very sick she could make me or the dozen other women there who are gluten free. She is sure to bring allergy free goodies to all church invents involving food and I look forward to offering her a helping hand the next time an event is coming up.

Check this out my family grew up vegetarian and we lived on vegetable proteins made out of gluten and soy ... I loved that stuff and just devoured it growing up. Our potlucks ( veggie across the board ) relied heavily on gluten based proteins.

Ah yea... had a horrible time in school, regular sinusitis infections, was renowned for being uncoordinated. Hot on the heels of sinus infections were boatloads of antibiotics and ZERO yogurt or any other similar things to help my gut after that.

The whole idea of cross contamination has been very interesting to me. I am hoping that getting a pretty ugly candida issue under control will make this more manageable for me. I do know some who, once they got on the upside of their candida problem their issues with gluten did not go away but it was more like a sensitivity to it, saying that for them, cross contamination was not as much an issue once their gut issues were healed. Either way Im cool, its about feeling better period.

      Yes, I, too, have osteoporosis from years of malabsorption, too.  Thiamine and magnesium are what keep the calcium in place in the bones.  If one is low in magnesium, boron, selenium, zinc, copper, and other trace minerals, ones bone heath can suffer.  We need more than just calcium and Vitamin D for strong bones.  Riboflavin B 2, Folate B 9 and Pyridoxine B 6 also contribute to bone formation and strength.   Have you had your thyroid checked?  The thyroid is important to bone health as well.  The thyroid uses lots of thiamine, so a poorly functioning thyroid will affect bone heath.

      That sounds so very likely in my case! I will absolutely ask my doctor on my next bone check coming up in March... Thanks a lot!

      Calcium levels as measured in the blood can be quite deceiving as the body will rob calcium from the bones to meet demands for it by other bodily functions. Also, supplementing with calcium can be counterproductive as it tends to raise gut pH and decrease absorption. More often than not, the problem is poor absorption to begin with rather than deficiency of intake amounts in the diet. Calcium needs an acidic environment to be absorbed. This is why so many people on PPIs develop osteoporosis. The PPIs raise gut pH. And some people have high gut PH for other reasons. Low pH equates to a more acidic environment whereas high pH equates to a more basic (less acidic) environment.

      Kind thanks for all this valuable information! Since my Folate was/is low and also my Calcium, there IS a chance I am low in B vitamins... My doctor only measured the first two, oh and Zinc as I has twisted her arm and guess what, that was mega low too. So who knows, until I get myself tested properly, what else I am deficient in... I did a hair mineral test recently and it said to avoid All sources of Calcium. But this is confusing for me as my Ca is so low and I have osteoporosis because of this. It is my Adjusted Ca that is on the higher side and shouldn't be. So am not sure why the mineral test showed high Ca (well, it was medium in the test but relative to my lowish Magnesium, also via hair sample, it was high I was told). But anyway, thanks again for the VitB download, I will look into this most certainly!

      Hello good afternoon, I was wondering if anyone has ever brought their anti-allergy pills? I have been wanting to use their Cetirizine HCI 10mg. They are called HealthA2Z and distributed by Allegiant Health.I’m also Asthmatic and these allergies are terrible for me but I also want to be sure they don’t have any sort of gluten compound.    I have tried calling them but to no avail. Has anyone ever used them? If so, did you had any problems or no problems at all?    thank you
