I am so happy I found these!!

I have always been a muffin junkie. I have been mourning the loss of chocolate chip Muffins from Dunkin Donuts. I came across Udi's brand of double chocolate muffins in a freezer near the bakery in the supermarket. at 7.99 for a box of FOUR I was like omg..I cant buy these..thats SO EXPENSIVE!! but I did and when I took the first bite I was nervous it would be NASTY. But it was REALLY good! A little grainy but pretty decent. So excited!

If you have a muffin craving in the future, they are very simple to make just as good gluten free. And for quite a bit cheaper. :) That is, if you are so inclined... :)

They sure are easy and a great way to use up bananas or blueberries before they turn bad. I really like the Pamela's baking mix for muffins. So easy to make and I find they freeze well. If I don't freeze half the batch I will eat them all the first day.

Amen to using up ingredients! Strawberry banana and flax muffins are one of my favourites, as is banana nut chocolate and lemon poppyseed. I have not yet tried any baking mixes but I have heard many good comments regarding Pamela's mixes.

Open Original Shared Link The secret is roasting the bananas first for better flavour. I simply add some flax and very good chocolate which I cut into chunks and slivers using my knife. This makes excellent banana bread but also very good muffins! Use whatever blend you have on hand for this. I make my own blends but you do not need to for muffins as they are so forgiving.

How about this version with bourbon? Simply substitute your favourite blend for the 2 cups of flour (as long as it is basic including starches such as tapioca and white rice flour - nothing crazy or wild here).

Off the topic but this site also contains the recipe for the world's best gluten-free chocolate chip cookies by the Gluten Free Girl and the Chef. The secret here is to refrigerate the dough for 48 hours. This is the only recipe you will ever want to use. Ever.

Thank you much! I needed some mroe recipes. I find a lot of my old recipes do not work converted to gluten-free, simply because wheat is just what MADE the recipe! But, I'm working on it though. I'll win in the end, I will.

One of my favourite sites with contemporary gluten-free recipes is www.glutenfreegoddess.com. Her brownies are delicious as well.

If I crave something, I simply find a way to make it such as crepes, biscuits, scones, pizza crust, cookies, cakes, breads, bagels, pastry and so on. The only things I have not mastered at this point are puff pastry, phyllo pastry, croissants and yeast (not cake) doughnuts.

And yes, you WILL win!

      Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have.It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

      @Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

      Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

      Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!
