I can't imagine not liking pork chops! But then I am a carnivore. :D Have you ever brined pork chops before? It takes water, salt and maybe a touch of maple syrup and it makes all the difference (just google for recipes - they are dead easy). I like to throw in a vanilla bean and juniper berries into my brines but you do not have to.

Do you have ketchup, brown sugar, mustard and Worcestershire sauce? If so, you can make an easy sauce using those things as well as a bit of onion powder you mention (fresh onions are better, though). What all do you have in your fridge??

Have you ever made risotto? Another easy thing that is restaurant quality. Have you heard of Hasselback potatoes? They are also very simple but look and taste impressive. I posted a recipe for them on here somewhere. Then all you need to do is heat up some frozen peas and season well.

This is like a puzzle? I would choose...salt, pepper, onion powder and paprika....dust the combined ingredients and fry in the olive oil.

(Olive oil really needs to be fresh - old is nasty )

Side: Baked potato, rice or any fresh veggie.

Oh, Oh, Oh......we always dip our pork in apple sauce.

Last time I had pork I just fried it up with a little salt and pepper, but I <3 pigs. I fried a sliced apple until lightly golden and turned it into an apple in caramel sauce. Hasselback potatoes are awesome. They are super easy but look fancy and always impress. You might earn yourself a footrub even if he doesn't like the piggie.

I would say all of the above. And butter. But I'm an overachiever. And maybe lay off the pork chop sales from now on...

I bet the hasselback potatoes (minus the bread crumbs) would be really good with sweet potatoes.....

They are good. I just switch some of the ingredients up.

Actually, I almost never user bread crumbs for Hasselbacks. I insert garlic and bay leaves in between slices and cover with cheese and scallions. They are so good!

Do you have a grill or barbecue? Grilled pork chops are so wonderful. Especially after brining!! :D Another idea is roasting seasoned chops (in a cast iron skillet - if you do not have one, it is a must for so much) in the oven with grapes and onions (chopped). They all roast together and become caramelized and sticky. So good with apricots, too.

Hi,  My 7 year daughter has complained of this in the past, which I thought were part of her glutening symptom, but more recently I have come to figure out it's part of her histamine overload symptom. This one symptom was part of her broader profile, which included irritability, extreme hunger, confusion, post-nasal drip. You might want to look up "histamine intolerance". I wish I had known of this at the time of her diagnosis, life would have been much easier.  I hope you are able to figure out.

My 5yo was diagnosed with celiac last year by being tested after his sister was diagnosed. We are very strict on the gluten-free diet, but unsure what his reactions are as he was diagnosed without many symptoms other than low ferritin.  He had a school party where his teacher made gluten-free gingerbread men. I almost said no because she made it in her kitchen but I thought it would be ok.  Next day and for a few after his behavior is awful. Hitting, rude, disrespectful. Mainly he kept saying his legs were shaking. Is this a gluten exposure symptom that anyone else gets? Also the bad behavior?

Not necessarily. The "Gluten Free" label means not more than 20ppm of gluten in the product which is often not enough for super sensitive celiacs. You would need to be looking for "Certified Gluten Free" (GFCO endorsed) which means no more than 10ppm of gluten. Having said that, "Gluten Free" doesn't mean that there will necessarily be more gluten than "Certified Gluten" in any given batch run. It just means there could be.

I think it is wise to seek a second opinion from a GI doc and to go on a gluten free diet in the meantime. The GI doc may look at all the evidence, including the biopsy report, and conclude you don't need anything else to reach a dx of celiac disease and so, there would be no need for a gluten challenge. But if the GI doc does want to do more testing, you can worry about the gluten challenge at that time. But between now and the time of the appointment, if your symptoms improve on a gluten free diet, that is more evidence. Just keep in mind that if a gluten challenge is called for, the bare minimum challenge length is two weeks of the daily consumption of at least 10g of gluten, which is about the amount found in 4-6 slices of wheat bread. But, I would count on giving it four weeks to be sure.
