ARCHIVED Need Advice I Am Getting Scared
PatBrown replied to mhansen's topic in Coping with Celiac Disease
I really think that you should get a proper diagnosis. The cancer thing could very well be associated with Celiacs. Go to a specialist. The bowel symptoms are not the only thing affected by Celiacs. -

PatBrown replied to busybee629's topic in Gluten-Free Recipes & Cooking Tips
What if you wore on of those masks that people sometimes wear mowing the lawn. The owner of my favorite Mexican place used to own a pizza place with a partner. They had to sell it becuase the partner became celiac and breathing all of the flour was really making him sick. -

PatBrown replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
I do have a King Arthur deep dish stone pizza pan and I love it. There was recently an article in The Washington Post about a lady who found out that she had celiacs and the pizza recipe was so close to regular. Nothing liek any of the mixes or frozen ones I have tried. -
ARCHIVED Durable Pans For Baking
PatBrown replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
I bought some really nice pans at The Home Store. Also saw them at TJ Maxx. There were two brands that looked exactly alike. One was Calphalon and I cant remember the name of the other one. They were 5.99, 7.99 and 9.99 for the largest cookie sheet sized one. They were grayish silver colored, very heavy and easy to clean. I went back and got a 9x9 one. I... -
ARCHIVED gluten-free Ranch Dressing
PatBrown replied to celiac-mommy's topic in Gluten-Free Restaurants
I also like ranch. I make the Hidden Valley one with the dry mix. That way I can make it lighter using lower fat mayo. I never eat ranch dressing out as I dont trust that there wont be gluten in it. -
I am in Charleston as we speak visiting my son(who is a chef at a nice restaurant on Kiawah island) . We ate luch downtown yesterday at a Thai restaurant called Basil. I had a rice noodle dish with chicken. I have also eaten at a place called Poogans Porch(on Queen Street). I think if you eat at one of the midrange spots(not burger and ribs type) they will...

I guess I am lucky because being celiac didnt bother me until I was 56. I have always been iron poor(sometimes anemic) but never any other symptoms. I wish that I had an immediate reation to gluten but dont. That way I could at least figure out where it came from. I was using canola oil and some people(on this board) said that it bothered them, so I have...

ARCHIVED How Do You Get Your Fiber?
PatBrown replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
Stoneyfirld Yogurt has something called inulin, which is added fiber. Quinoa: I dont really like it by itself but cooked it and used it with ground turkey or beef for stuffed tomatoes. I also use it in meatloaf instead of bread. Bushes baked beans(I eat them for lunch sometimes).I add Perkys Nutty Flax to whatever cereal I am eating. Its very crunchy and... -

ARCHIVED Gluten Free 2 Months And Burned Out
PatBrown replied to bellabrit7's topic in Coping with Celiac Disease
You just need to find gluten free ways to satisfy your cravings. When I first became gluten-free I really missed Vienna Finger cookies. I have replaced them with an Italian cookie and a sugar wafer kind of cookie that I buy and snickerdoodles that I bake myself. When I want something sweet and chocolatey I have a Stoneyfield "Underground Chocolate " yogurt... -

ARCHIVED Please Comment On These New Results.
PatBrown replied to buzz's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Sue, I cant remember where, but I read something about not giving babies in families with Celiacs disease gluten until they are eight months old. Hopefully this allows the body(if carrying the propensity) not to create a reaction to it. Does this make any sense? I have two sons and think one may have celiacs. He wont get tested but when he has children I... -

I did really well and after three months did bloodwork and it was great. Now I am again having bowel symptoms. I am thinking that I am more sensitive to contaminant gluten. Changed one medication(the drug company couldnt guarantee that the med was gluten free). I was diagnosed last march and feel much better now. I am eating more healthy and have gained...

ARCHIVED Recipe Help - Rice Hotdish Using Cream Soup...
PatBrown replied to Bethrenee's topic in Gluten-Free Recipes & Cooking Tips
I used the cream soup recipe in a Mexican Casserole for Chicken and Chips and it worked but there was no rice in it. I would use the soup mix and add double the amount of water as the rice(1c. rice 2 cups of water). -
The recipe actually from a Celiac cooking site . It had baking soda and powder and the first time I made themthey were really flat so added xanthum gum the second time. I will have to try to find guar gum and make them again(I will use more baking powder and soda). TIA

ARCHIVED Why Is This So Unknown?
PatBrown replied to Curious121's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was diagnosed by the doctor that did my endoscopy. He noticed that I was almost amenic(again) and that my liver enzymes were slightly elevated. I am so thankful. I knew about the liver enzymes and everything I read about it didnt sound good(although my reg. doctor wasnt worried about it). It was a phosphorous think: probably having to do with bone breakdown...
