  4. You could always have the gene testing done on yourself to see if you carry the main Celiac gene. It will not tell you if you have Celiac but if you carry the gene, you will have the genetic pre-disposition for it.   8. There are other reasons why tTg numbers do not fall quickly. The other possibility is that your son may have one of the other autoimmune problems that often go in tandem with having Celiac Disease.   9. Any and all gluten-free baked goods dry our very, very quickly and add to that most do not add all those crappy preservatives and chemicals to keep them artificially fresh. Unless something will be eaten in it's entirety in 24 hours, I store everything well wrapped in the fridge. keeps much longer that way. Gluten eaters do not know this!
