It will be 2 years for me being gluten-free in June. I was closer to eating Raw before being diagnosed as, like you mentioned, have not healed enough. Great message tarnalberry. I don't expect others to wear their celiac as badge of honor. All we can do is hope to educate others and not be ashamed of something that we are inflicted with. We can talk choices and how we fell like who's should etc. but the bottom line for me is to present choices and educate those interested. It's up to them if they listen...

I think you'll have to make your own onigiri from now on! Circle K, Family Mart, 7-11, Daily Yamazaki all have lots of onigiri with lots of ko-mugi or o-mugi. Your 100% correct. Even then some areas and those who are not that familiar with sushi may have a hard time knowing which places may be run by other cultures. lst year I took my grandkids out in Chicago to a place I didnt know. -- It was Chinese run but the only way you would know that is you spoke to them in japanese and they looked back at you funny... -

Right, When I was in japan in March I checked 30 makers. 24 were ok and only nori (seaweed) with or without salt. The others had soy sauce used in the processing. These days I never order rolls unless I know the chef or they let me check the package. At lunches I order chirashizushi which is a bowl of sushi rice with the fish on top. Ken -

You should be able to get whole dry cayenne at Asian or Hispanic markets. The taste is much better than the bottled spices, and hotter! -

Cant say for sure about China but in Japan in 2005 I was told there were 12 reported cases of celiac and in 2007 over 20,000. I would guess this is in part to the increased western diet and in part to better diagnostics and doctor awareness. My theory although often based in heredity, celiac can be brought on by diet and I suspect those of Asian decent will... -

These days I'm more of a grower/pusher than a user/chef. Seeing these boxes from China come into the stores here with off color runny ink marked USDA organic really makes one wonder... Your so right about the edamame. Not only is the cross contamination issue a problem but often the pesticide residue causes other problems even for non-celiacs. Be careful of some of the nori seaweed wraps as some of them are dried with shoyu -- soy sauce which as you know is not usually gluten-free.If the place is really Japanese and run by Japanese nationals the nori is usually ok. I know your right about the smell not being a factor but there are airborne particles of flour unless the manufacturing process is totally encased. Having been affected by walking near a store bakery and standing outside a pizza place, I can say that flour is in the air and it is dangerous to many celiacs. That has to be tough. (smelling toast daily). I know for me breathing flour by accident always makes me sick. I read on the forum it takes 24 hours for flour in the air to settle on the ground. You might check first, with local regulations about exhausts from factories and then find out if they have an afterburner or air filters and cleaners. I would...

kahleemehrah Meline tee kahnehteh? I did have bad shakes that was only from Gluten. Mostly at night and sometimes waking me up. One time my body threw itself off the bed! Sometimes during the day when I was awake. I can remember one time my leg shaking so much I couldnt focus my eyes on it! After gluten-free, it all went away! adio ken

I had this problem prior to celiac diagnoses. it was so bad that they treated me for some type of Parkinsons. It didn't go away until I went gluten free. It takes a little time but after being gluten-free many of the symptoms you mentioned change or disappear. good luck! Ken
