  1. Even though I have big commercial cook wear that I can boil stuff in, I wouldnt do it to cutting boards although I did boil some smooth surfaced fry pans. They make a lot of noise banging into each other in a full rolling boil! I did have to buy my own little forman grill and let my wife keep the old one. Gave away the cast iron. So far no problem...
  2. Thanks much, these are great suggestions! The confirmation aspect of the servers role is really important. I usually have to ask 5 or 6 times during a meal if this is the gluten-free something or other. Really a great point! Some of the high end places in Honolulu and a few here do make a point of making sure the whole meal is gluten-free and will...
  3. Thanks so much, This is a big help. I screamed at this waiter once for doing the crouton removal thing. Something I never do but I was really hungry had a busy travel schedule and so on and took a bite. He was lucky I didnt throw the salad at him. I had not been that mad since my kids were young --25 years ago. Your right that it can be confusing and...
  4. Gret minds think alike <G>
  5. Maybe it depends on the maker. This is from the Open Original Shared Link site which makes sweethearts. Which Necco products are Gluten Free? We make the following products which do not contain gluten from wheat, rye, oats or barley: Necco Wafers, Mary Janes, Mary Jane Peanut Butter Kisses, Sweethearts Conversation Hearts (Valentines only), Canada...
  6. Thanks guys I really see my being diagnosed as a way to increase awareness in Hawaii which in terms helps the restaurants and tourism in Hawaii which in terms helps the farmers become more sustainable -- which is what my job is supposed to be, helping farmers make more money. <G> The only thing I regret is not being able to judge all the cooking...
  7. Could be although I've not had any problems. That was two years ago on mostly stainless utensils. Never heard the 600 degrees but if thats the case I will be even more careful!
  8. We're about 95% gluten-free as there are some things my wife wont give up. She has her own pans for that but every now and then grabs something of mine. When we went gluten-free just under two years ago I boiled a lot of the utensils and machine parts. New plastics and silicone tools, spatulas etc. that couldn't take boiling. I have my own containers. There...
  9. Still has another year on it. We're so remote that people often shop at Ace for foods as well as hardware. This Ace also brings in items directly from Japan instead of going thought their corporate in the Midwest. take care
  10. Found Chef Karlin Soy Sauce at the local Ace Hardware (must be for industrial seasoning!) There is no wheat listed although there is caramel coloring. Does anyone know this brand and have experience with it? I did send email to the company location north of Chicago about this and other products. Ken
  11. Thanks so much for the comments! Your right I need to mention cheese in a special section -- often blue cheese is dumped on a plate with other edible ones. Didn't remember about the charcoal, thanks for that too. Nuts are always a question. My grad student was over a few months ago. (She's form South India) I picked her up at the airport at 630am before...
  12. By all means! I leave the 4th for Japan but if you feel like heading to the Chinese place in Captain Cook on the 2nd, let me know! On the 1st there, if you get in on time, there is an avocado festival and Greenwell Ethnobotanical Garden. Open Original Shared Link tells more about it. Where are you staying? Ken
  13. Thanks Amber I really cant say about the celiac societies although I know there are many mentioned in different places online. There is nothing active here although I did get an email after a newspaper story appeared about one on Oahu. I called but never got a hold of them or return email. I found more types of gluten-free soy sauce in Japan than here...
  14. I do think its changing for the better, especially in Hawaii. the newspapers have done stories and I've mentioned it on a morning news show back in Dec. Here on the Big Island, especially in Kona the chefs are much more aware than on other islands. it's not a matter of having to discuss menus as much as just letting them know your daughter is coming and...
  15. Aloha all! Thanks again for your help and responding to the menu ideas for the new hotel restaurant here. The chef had me come in today to taste a number of items they came up with that are gluten-free -- I ate way too much but no problems!!! I went into the hotel kitchen early to watch the sous chefs working and just check to see if there may be...
  16. Hi, No problem at all! I'm really working here to get chefs and especially my culinary students up to speed on everything. Its good for celiacs and good for our island. I have an office in Tokyo and usually spend a few months a year there. In march they have the worlds largest Food show with 8 football field sized rooms with foods from every country! I...
  17. Hi, I'm one of 3 celiacs I know of on the Big Island although I'm sure there is more. Met #3 yesterday. I work with the chefs here including those at the Hilton. I'm sorry I wont be here to show you around when your family is here as I'll be working in Asia for a month. I can say there are a number of restaurants and healthfood stores which all offer gluten...
  18. My feeling is that when we get glutened by things like Sams club chicken and things often marketed as Gluten Free is that its based on ignorance of the producer and we are the ones that suffer. Long time chefs I work with here and in Japan think of soy sauce as soy. The little they know of celiac is that we cant have wheat and rye, bread and pasta -- they...
  19. Like Ursa said, you were right. At our farmers market there is a nice couple selling wheat grass that they said was gluten free until I gave them a bunch of papers I got of the net saying otherwise. There is no way we should consume it as there is still enough gluten protein to make us miserable.
  20. Hi I like to use buckwheat or soba flour which stays softer when covered before serving but it's more like a crepe and not as firm as roti. Sometimes its hard to find pure one too. Usually health food stores are the best to find it order to order it form internet. I want to find better combinations than I use now. Last night I made saag but missed to...
  21. Hi, I am not Indian but prepare many Indian foods although mostly achar since we cannot buy them where I live. My spices come from Jodhpur. Bajra (Pennisetum typhoides L.) is a type of wheat called Millet in English and dangerous for us celiacs. it's about 11% protein. Jawar or Jawaar is Sorghum which is very good for us and should make good roti. There...

  23. I had vomiting episodes almost every day for 6 months prior to diagnoses just under 2 years ago and it was definitely related to celiac. As soon as they figured that out and I went totally gluten-free, the vomiting, dry heaves, stopped and i've never had another problem even when accidently glutened. I'm extremely paranoid about any vitamins and pills....
  24. I forgot that one too, got back from harvesting and wife was ecstatic about something, gave me a big kiss in the middle of your tuna sandwich on french bread. I hate crumbs! <G>
  25. Tell there are two big guys here too, ones a hall of fame football player and ones a mountain climber and we have the same problems as him and not to worry! We're with him! Ken
