  1. Hi Meline I think at one time Chicago had more Greeks than anyplace outside of Athens! ITs too bad you have so many allergies now but maybe some will clear up. We can never stop the celiac but maybe some of the others. It's too bad about Ouzo. Here no stores sell retsina so I have to order it. I think mantarinia must be mandarin or tangerine, smaller...
  2. I use it fairly often in soups or stews. the trick is to cook it in a different pot and have it ready to add to the soup just before serving. I also find that I dont cook it as long as it says and rinse it quickly with warm water before adding it to the soup. Good luck
  3. Hi Meline, What will your mother use to make the spankopita? I hope she can make a good recipe. My son is a chef here in Hawaii but his first cooking lessons when he was very young were at a Greek church during a festival in Chicago. Growing up in Chicago your countries culture was everywhere and when I trained as a chef in Japan, my teacher asked me to...
  4. I must be spelling it wrong, the wrap for spanakotiropita phylo or filo? Its great you have such a good attitude towards celiac. Sure it is natural to miss to eat some foods but there are new ones to explore for, find and enjoy. I work a lot of figs I think you call seko. The best in the world are from Greece. Like you I do not miss to have bread...
  5. I think it just takes time to get to know how your body changed from celiac. I'm still learning after 2 years after 55 years of no trouble with anything. Some of us on the forum are trying to develop the perfect gluten free pylo. Do they have any gluten free foods in Greece? Take care ken
  6. kahleespehrah For me it depends on the type of accident I eating or inhaling or degree of cross contamination. I think it also depends on how far you are from the starting point and how much you have healed. For me its been almost 2 years and if I have an accident now, it can take 2 days to a week to feel normal again. A year ago it could take 3 weeks...
  7. If it's distilled and not brewed, it should be ok. I drink other distilled from barley alcohol (Shochu from Japan) with no problem. Just don't know how Caravella Limoncello but hope to find out before I get to Italy in July!
  8. I dumped most of mine but kept 2 which I'm attached too. One was my great grandfathers from the 1880s. The other an antique from Japan. I boiled the whole pans, scrubbed with a wire brush and boiled again. So far no problems. Although I consider myself to be very sensitive to gluten, I continued to use these and have had no problems (knock wood). They didnt...
  9. Hi, It was great to see you guys tonight and have the gluten-free Chinese dinner. Lots of fun. Look forward to seeing you in the morning before you head to the Volcano. Take care
  10. What Ursa Major told you is important to follow. You have a lot to learn and research. I went through the same 2 years ago, also in a rural area of Hawaii where most people including myself had never heard of celiac. Some people still think having a gluten free diet is a matter of choice like being a vegetarian. They are very mistaken which I now point out...
  11. Hi, Look forward to seeing you late today or tomorrow. I'll be at the avocado festival at Greenwell Ethnobotanical Garden all day, I think its over at 6 tonight. Dinner after that or tomorrow would be great, whatever is best for you guys. take care ken
  12. Thats one I never would have thought about-- glad my cats live outside! Kind of easy for them here in Hawaii
  13. Sometimes on the University of the Philippines web site Open Original Shared Link They will post recent legislation. I'll drop a note to my friend at the Los Banos campus to check on it. ken
  14. Thanks much, I think the tourist industry here needs to help develop these types of guidelines. Were small enough that in some areas it mightbe possible. A gluten free hawaii may not be around the corner but its worth working on! There is noting listed in Hawaii now at glutenfreerestaurants but there should be. We need to develop our own lists by...
  15. For me it depends on the exposure. If I accidently inhale flour or breading in a kitchen, I can break out in as short a time as 15 minutes. If I east something supposedly gluten-free or get some accidental cross contamination, it can take a few hours. Depending on the amount i'm exposed too, it seems to vary the severity of the dh and stomach ache. Hope...
  16. Doesn't sound like a consumer product and more for a factory QC test. Then again I wonder if 2 pack means only 2 tests or if each pack may contain a number of strips. Wish they were more clear on it. Sure would be nice to test something before we eat it. although waiting 10 minutes like this says would seem like a long time when everyone else at the table...

    ARCHIVED Resturants

Hi welcome to the forum. A lot depends on what island<S> your on or visiting as well as what you mean by mainstream. On Oahu Chef Mavro's and LeMer are great but also the most expensive. They do understand gluten-free meals and will prepare anything as long as they have advance warning. there are also Outback's on 2 or 3 islands. Nicks Fish Market...

Al;ready you kn ow me so well!
  19. Aloha, Here is an updated list that includes your comments. Anything else anyone would like me to add? This will go to hundreds of chefs in Hawaii! Thanks ken Dos and Don'ts for Preparing and Serving Gluten Free Meals in Hawaii's Restaurants. Do's Make sure menu items that are marked as Gluten Free (gluten-free) are Gluten Free. (If not, your...
  20. Almost forgot, I'll take a rain check on the gluten-free curry!
  21. I really empathize with the dog! I got chased my a goose while walking along the Canadian Minn. boarder fishing the Rainey River and stepped too close to a nest. This thing started complaining and snapping at me so I took off with it chasing me. It finally gave up but then it dawned on me the damn thing was lucky I was fishing and not into hunting! ...
  22. How about you girls with pregnancy cravings? About 30 years ago (yeah time flies) when my wife was expecting #2, she woke me at 3am needing a chocolate cream pie STAT! Not having much in the house, I smashed graham crackers into a pyrex with melted butter. Poured in a half can of Hersheys syrup -- knowing she liked marshmallows, decorated the top...
  23. I used to fly a lot, often 4 or 5 times a week and always sleep very good on planes. Flying from Atlanta back to then home in Chicago after a tough assignment, I woke up when the flight attendant shook me and said I had to get off the plane, only I missed Chicago and woke up in Minneapolis! Fell asleep in the Honolulu airport once too and missed the...
  24. I wanted to chime in too and wish you a wonderful birthday. Your messages have always been very helpful! Ken
  25. I was 53 when they first figured it out in me. Blood tests were iffy and I kept having to talk the doc into doing more. Finally I demanded the other scope and sure enough, almost no vili left in the small intestine. Fast forward two years and I've seldom felt better. Stopped taking all the other medications too but just started to take some gluten free vitamins...
