It is a great list. I would add that in the kitchen, the cooks need to make sure they do not use the same gloves when preparing gluten-free meals and regular meals. There are many chances for cross contamination in restaurant kitchens and the chef/cooks need to be aware of it. Ken

Your right that location may figure in the legal aspects. In Hawaii, we have different laws on each island as each has it's own health dept. which may or may not answer to the state health dept. You should be able to bring not liquid or gel foods and snacks with you. I had to go to Guam a month ago and had Continentals gluten free meal. the one gluten-free cookie was about all I could eat as they dumped bread on top of everything else. Now I just order the fruit plate! -
Maybe you can visit the place before hand or set up a meeting. No restaurants like people talking bad about them so I suspect they may let you bring in wheat free soy sauce to use on something or they can prepare something special ahead of time with advance notice. I'm 50 years older than your son but my sympathies are with him. I went through the vomiting spell for 6 months daily. As soon as I went gluten free it stopped after 2 days of being off of all gluten. I'm sure someone on the forum could give you the name of some doctor who specializes in children and understands celiac. Good luck Ken -
