  1. Have a baked sweet potato, some well cooked white rice & some steamed broccoli. applesauce, tuna mixed in with the rice is good. I would skip all gluten-free processed foods like bread & that canned chicken soup. Make yourself some chicken soup by boiling a chicken breast till it falls apart & adding some carrots & cabbage - nothing else...
  2. Open Original Shared Link here is a link to the Oklahoma City group. I am sure they will have local shopping information for you... Be sure to ask about the ROCK group! (Raising Our Celiac Kids)
  3. well, you will have to decide for yourself... But IMO I think you will be much healthier not using wheat flour & glutening yourself everyday. Do you want to be a healthy happy mommy? The good news is that most all cookies, cakes, cupcakes, pies, lemon bars, brownies, tarts, banana bread, & my favorite carrot cake will all taste very yummy made...
  4. I know one thing & that is that if you have UTI's there is a food causing it. It might be something else in addition to gluten. I am also mostly grain free. So to start I think that you need to be completely gluten-free, (good to be grain free) dairy free, & soy free. Then from there it should be easier to figure out if it is another food...
  5. Did you cook the bacon & eggs in a non-stick skillet or cast iron skillet that you usually cook gluten foods in? I would say it was the dairy. Better to not eat dairy for at least 6 months - well really I think dairy is awful on its own & people should not eat it. dairy does NOT give you strong bones & teeth - that is an advertising myth...
  6. I went thru that UTI routine for over 30 years. I am an expert on antibiotics... Occasionally I would go in to the doc, leave my sample & tell the nurse which antibiotic I wanted her to call in... I had it down, never missed a beat on my way into the office!!! I sure was not going to waste my time talking to the doc!!! Mostly I just called them...
  7. You might want to think first if you want that official diagnosis on your medical records. If you are young & might be changing careers etc... If you do go on the diet & get better then really that is the diagnosis. You can also test thru Enterolab.com I highly recommend them. Yes, being overweight does not mean you are celiac or gluten...
  8. I would double check your medications & everything that you are eating, sounds like some gluten is slipping in. Also get some blood work done for vitamin & mineral levels. Sounds like you have something not in balance. Start taking B12 regardless of the level that you test - most of us think the standard is too low anyway. take a sublingual for...
  9. You might need to rethink the amount of fat & protein that you need. despite what the general population thinks, meat fat is good for you, so eat bacon & use the fat that is rendered. Also good is coconut milk, coconut oil, advocadoes, olive oil on your salads or drizzled on your plate of food (olive oil when heated becomes a bad fat), &...
  10. "I live in the middle of nowhere, Alaska. I have enough reasons to not be very social, but now I'm a freaking hermit because I don't want to risk any contamination." well I live & work in the middle of Houston, Texas. can I come visit you!!! The middle of no where sounds divine to me. I do not know how a country girl like me got stuck in the...
  11. I also like the book "Dangerous Grains". "Good Calories Bad Calories" by Gary Taubes is a must read for everyone, not particularly a gluten-free book, but it shows you that grains are not good for anyone, & how the "studies" in the U S have been skewed because of economic & political issues, not to mention peer pressure. It is difficult to be a...
  12. Oh Wow, Deb, I am so happy to hear you say you are not going back to grains. You must be feeling a lot better. I am also a double DQ1 no grains (mostly) person!!! & yes, I think it makes you have more energy & just be all around healthier. Smiles, you have a DQ1-0501. You might want to search the topics on here about that gene. & you can...
  13. I am 61 & I live a pain free life!!! I had a broken knee three years ago, major surgery, 2 metal plates & six screws in my knee, not only do I walk without a limp, I have no pain what-so-ever. My surgeon is amazed!!! I need to call him, he is supposed to write me & my gluten-free diet up in the medical journals - since I still do not have...
  14. yep, I agree good to not have an official diagnosis. You have a 50% chance of passing that DQ2 gene to each of your children. But really you might also have a DQ1 or DQ3 & others, that are the gluten intolerance genes, that they probably did not test you for. AND, there is a DQ1 gene than can be part of a DQ2 gene, (not that I understand it all...
  15. I cannot tolerate any processed gluten free items, like gluten-free pasta, crackers, cereal, bread that kind of stuff. Are you cooking with any new flours like tapioca? some people like me cannot tolerate tapioca. I agree with another poster that he should also be dairy & soy free at this time. I also cannot eat brown rice. Everyone is different...
  16. Hello, & hugs from me to. Don't sweat it, you will have to just start from today. Please make your freezer & your lunch kit your best friends. Always take some food with you whenever you go anywhere, even if you do not think that you will need anything. I have an assortment of lunch kits, lunch bags, totes etc. being girls we have it easy...
  17. Trust Birth, That lab in Texas is Enterolab.com I highly recommend them. No need to be eating gluten to test with them. & they will test for the celiac genes & the gluten intolerant genes.
  18. I am gluten-free, DF, SF & high fructose corn syrup free - been avoiding that stuff like the poison it is. Avoiding corn syrup is harder than avoiding gluten. Ever try to buy a juice or canned tomato product that does not have corn syrup? But, to help the OP, be aware of food combinations. If you are going to eat a potato & you suspect that...
  19. wow, total clueless allergist!!! That is dangerous. yes, his allergies, should get better. The food & the inhalants should improve on a gluten-free diet. You might also have to eliminate dairy at first. & I would forget soy, that stuff is just not good for anyone. He might keep the peanut allergy, but the allergic effect should be lessened...
  20. GlutenFreeKitchen, your isolation is my heaven. I love my all gluten-free kitchen. Summon up the courage to speak up for yourself. Just take your own food with you when you go places. I did it for years before I even knew about gluten, because of all my allergies. Other people with allergies have to do this also, not just the gluten avoiders! Have...
  21. wow, good for you. Yes we are very interested in your day to day progress, please keep us posted. during this time, please make sure any sodas that you are drinking does not have any aspertame or any artificial sugars. Some of us (me) are super super sensitive to any artificial sugars. I am even allergic to mannitol (used in vitamins). really...
  22. Hi Glutenfree girl, I just saw on another thread that this is day 2 of gluten-free for you!!! Congratulations. & good for you if you are only feeling mildly sick. If you are not on the bathroom floor etc, it is a good day... Not sure if you are wanting any suggestions or just commiserating (not sure that is a word!) thoughts. For the next...
  23. oh my, driving those grain trains - well yep, you might be getting enough to even test positive on the tests although you are not eating gluten. I know you probably won't do it, but you should wear or at least keep a mask handy for when the wheat spill is really bad. What happens is that you breathe that stuff in your nose & your mouth & throat...
  24. Yes, you should be gluten free also, there are threads on here about how the gluten goes thru the breast milk. that includes no oats, no wheat, no rye, no barley & no barley malt & no spelt. try grits or cooked white rice with sugar & cinnamon. Baked apples are also good for breakfast.
  25. One suggestion, you could contact your local support group. wishing you better heath...
