My son is 19 and has Down syndrome. He was just diagnosed in Jan.
This is the first trip I have had to send him on.
He is going to state Special Olympics.
I packed a bunch of food for breakfast lunch and snacks.
They are able to go to get take outs for him for supper.
So far I have figured out Culvers chicken cashew salad is ok.
I am still looking up some where else. He will be there Friday Sat and Sunday morning.
It is a lot different this year sending him with Celiac disease.
I am sure he will be fine but I an nervous. My stomach is in knots.

First congrats to your son on being able to go to State Special Olympics!! That is a great accomplishment. I am sure he is SUPER excited! What event does he do? I have a friend that participates and she does the softball throw and speed walking. Probably not in your state though.
It's natural for you to worry. I'm sure that if you have provided the coaches and sponsors with the information they will take good care of him. Are you able to go and watch the events? If so, you could always take some more food with you just incase.
Maybe they could also do a grocery store run if needed. Grab some lunch meat and cheese and make lunch meat roll-ups. Fruit would be easy to pick up.
If they have an outback steakhouse nearby they have outback-to go. You call ahead and they bring it to the car. Chipotle is also good (burrito bol's). Wendy's has a few things, mcd's has a few things, both have information on their websites as to specific menu items that would be ok.

My kids and I were just talking about this. I used to put those baby saltine crackers in there (my store called them oyster crackers)...anyway....we have been trying to think of a substitute. My daughter likes the Nature's Path puffed corn cereal - it's like pop corn without the kernal in it. It's really neat - i bet it would work great in a chex type mix.
Oh gosh I had forgotten ALL about those little oyster crackers...and people would coat them with some sort of a ranch seasoning and those were SO good.
I also used to love the Munchee's mix from Lay's....has sun chips, nacho dorritos, all kinds of gluteny things! ha
I'm still pondering what to make and how to make it.......keep the ideas comming!!

I am making the duo cheese pizza tonight for supper. I can't wait to try it. They were on sale at a health food store I popped into for $3.19. I figured that wasn't too bad , so I bought it. I am baking it as I type. Hope it's as good as you all say!!

I thought the pizza was "OK". It wasn't the best I have had and it wasn't the worst I have had. Needs more sauce and more cheese. I did add my own peperoni. I would buy it again if it was on sale. However, probably wouldn't pay the 4.50 they were wanting when it wasn't on sale.

Some of the flavors contain sucralose (splenda). I read one in a hurry looking for gluten and casien, and missed sucralose (used to seeing Splenda instead) and got sick as I have problems with Splenda.
However, your problem with splenda doesn't have anything to do with the gluten content. Jones Sodas are gluten-free as per the manufacturer.

I use both blue bunny and hershey's frequently. Blue bunny will clearly list any ingredients on their label. Here is the statement from their website reguarding gluten:
Information about GlutenFederal Definition of "Gluten-Free"
The January 23 edition of the Federal Register contained a notice of proposed rule making to define the use of the term "gluten-free" for voluntary use for food labeling, to mean that the food does not contain any of the following: An ingredient that is any species of the grains wheat, rye, barley or a crossbred hybrid of these grains, an ingredient derived from them and that has not been processed to remove the gluten, or that has been processed to remove the gluten but more than 20 ppm remains. In addition, a food made from oats that bears a gluten-free claim in its labeling would be deemed misbranded if the claim suggests that all such foods are gluten-free or if 20 ppm or more of gluten is present in the food.

Ok. I have made chex mix before. I made the orig version (using rice and corn crunch'ems). It was good. Now I am craving maybe a ranch flavor kind. Any good recipes?? Or even recipes for other flavors. I'd love to hear them!!
Oh here is my next challenge. I can't have nuts right now (diverticulitis) so give me some other things to put in there....I am thinking maybe cornnuts!! What are your ideas?

I have been seeing this colorful fun bottles of soda at the grocery store. They have flavors like green apple, orange and cream, cherry, blue bubble gum, etc. I have been wondering each time if they are gluten free. However, I always forget to write the company when I come home. FINALLY I remembered !! Here is the response that I got back:

Baked Beans
Chilli Beans
Kidney Beans
Hillshire Farms Kielbasa
Ground Beef
Onion
Bell Peppers
Mustard
Worchestshire Sauce
Red Pepper Flakes and Hot Sause (or added individual)
Dollop with Sour Cream
We have a big Super Bowl Party and I serve it with a salad and cornbread. Kinda heavy for summer, but good.
BTW: It's called "Blazing Saddle Stew"!!! Anyone old enought to remember?
Sounds spicy but would be Soo good with that cornbread you mentioned...perfect combo. I'll have to try it out sometime.
BTW...not sure if beano is pet safe hehe.........they SHOULD make some for dogs...dogs are the worst about that!!

I made these baked beans tonight. A family friend makes a similar recipe and I was CRAVING them so I made my own attempt at them......here's the recipe:
INGREDIENTS
6 slices bacon (Hormel black label)
1 chopped onion
1 (16 ounce) can pinto beans
1 (16 ounce) can Butter Beans
1 (16 ounce) can baked beans (Busch's Orig. Baked in the big can is what I used)
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can black beans
1/2 cup ketchup
1/4 cup packed brown sugar
1 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1/2 teaspoon pepper
1 C BBQ Sauce (I used sweet baby ray's)
1lb. turkey burger or hamburger (browned)
I really didn't measure any of this, just sort of dumped and stirred
It can be made in the oven (like I did today) or put into the crock pot to cook all day.
DIRECTIONS
Preheat oven to 250 degrees F
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons of drippings, crumble and set aside.
Cook the onion and hamburger/turkeyburger in the reserved drippings until onion is tender; drain excess grease and transfer to the bowl with the bacon.
To the bacon and onions add all cans of beans Stir in ketchup, bbq, brown sugar, Worcestershire sauce, mustard and black pepper. Mix well and transfer to a 9x12 inch casserole dish.
Cover and bake in preheated oven for 2 hours. Take cover off and bake until sauce is thickened and bubbley. OR just dump everything into the crock pot and cook for a few hours.
Now you have a meal in one big pan. Add some sort of veggie and you are set

What's a Waldo's Pizza, gluten free?
Waldo Pizza is a place in Kansas City that makes us feel NORMAL again. They serve gluten free pizza!! It is SOOOOOOOOOOOOOOOOOOOo good!! The crusts are made by a lady/company called Olivia's Oven ( Open Original Shared Link ) . The pizza place buys them from her and she has taught them about CC.
Waldo's has two locations. One in Kansas City on 75th and Wornall and one in Lee's Summit Missouri.

As far as the twix goes, many people are asymptomatic (no symptoms) and the damage is still being done to their intestines. What's done is done, you made a mistake, but don't feel like just because you didn't have symptoms you can add twix to your diet now. Get back on track and avoid the wheatygoodness of twix

You can have most flavors of Dippin Dots. The big turkey legs are usually OK. Same with popcorn, cotton candy (always OK as far as I know), many ice creams, candy apples, and many drinks.

Richard is correct. Most dippin dots flavors are fine except the obvious ones like cookies and cream. Check out their website they have lots of good info on it. Cotton candy is a good option. I know it is hard right now, but try to look at the things you CAN have instead of what you can't. It helps
As far as the hubby goes, I think that family members also have an adjustment period that they go through. Many folks on the board talk about their family members having a hard time too. Give him some time and hopefully he will come around and realize this is what you have to do to be healthy and be a good wife. You can't do those things when you are sick!!
Things DO get easier. We all have that "mourning period" that we go through. Thinking of all the things we can't have and wishing we could. I remember throwing a HUGE fit at my parents house because they ordered pizza when I was there and I couldn't have it. Now something like that doesn't bother me.
Hang in there and post when you need some help. There are tons of nice and kind people here to help get you through this. We understand even when your family might not

Vanilla extract has to be alcohol free to be gluten free!! I also thought Haagen Daas was on the NO list regardless. Perhaps you should check on that one lady's blog with the product list.
Baskin Robbins has all the allergy info. on their placards in the window of the display.
We can have a few types of Ben and Jerry's and a few other brands.
We can have Wendy's Frosty and some Cold Stone.
I agree with Tiffany, research in the last few years has shown that vanilla extract is NOT a problem. The distillation process of alcohol (even if the alcohol was grain derived) removes any worry for us. Vanilla and vanilla extract are (in most cases) fine and nothing to worry ourselves about.

Vanilla extract has to be alcohol free to be gluten free.
Lots of vanilla flavored foods are NOT gluten free.
I don't eat vanilla ice cream because I've been glutened by it.

Research in the last few years has changed that info on vanilla/alcohol. The vanilla was once thought to be a problem because of the alcohol possibly being a grain alcohol used. However, research now shows that the distillation process of it would eliminate the worry so therefore most vanillas should be fine. Hope that helps you.

I have one Kinnicknick donut every Friday - it's my end of the week treat. However, one of the vendors at the celiac 5k in Baltimore last month was Celiac Specialties, and they had these donut holes out for sampling that were....well, they made those donuts seem like pound cake. They had blueberry, chocolate, glazed, powder sugar...and they were soft and everything I remember about donuts. I brought home a couple boxes...gone now. But they have a website you can order from.
All that I can think about now is blueberry doughnuts............I used to LOVE LOVE LOVE blueberry doughnuts
I do however, love the maple ones from Kinnikinnick. Also have found this WONDERFUL lady who makes apple cinnamon doughnut holes. They are little bites of heaven!!! Olivia's Oven is the name of the company that makes them OMG SOOOooooo good.

Monday I set up an appointment with the GI doctor I was referred to. I am just not "better" like I would like to be. The pain goes away while I am on the antibiotics and then comes back when I stop them. NOW ontop of that I am having bleeding ( I suppose hemmaroids). It's not a little it's ALOT which scares me a bit. My Mom thought I should go in and see my GP since I can't get into the GI until July 16th!! Called them today and told them what is going on and can't get in to them until Monday ( that's 6 days of waiting and bleeding and hurting) . I just feel like screaming.
I do NOT want to get as sick as I was 3 months ago. The antibiotics have gotten me tons better but not 100% and I am refusing to go back to being that sick.
I have also spent some time on the phone today trying to get old medical records to take to the GI appointment. The lady that I talked to acted like it was SUCH a pain to get those records since they are "probably in storage since it was SO long ago". Uhhhh isn't your job to get medical records, this IS the medical records dept!
I don't care if they are in africa, get them !! geesh.
Thanks for letting me vent............Doctors are frustrating
