    I went on the internet and looked up modified food starch and If I understand it correctly it's a chain of gluten ingredients, but since they have the new laws about listing wheat can I assume that modified food starch in most things is fine? I was making corn chowder tonight and the cream corn I was using said modified food starch so I didn't use it....

    Yes I would definitely change dr's especially if your dr. is not even willing to research the disease before he gives you false information on it.     I'm right there with you. I not only have Celiac, but I think my 2 yr. old daughter and possibly my 5 yr. old son have it and I have two other boys that I'm testing just to be sure.     LOL but my problem is that I have a little avoidance personality disorder (that has been caused by my medical condition no doubt) but I have a really hard time speaking my mind when I'm face to face with people. That is one of the things I'm hoping I can change when I'm feeling better :-)!!

    I could not have said it better myself, and unfortunately I don't always have the gift of words, so things don't come accross as I often intend them, but I try really hard to be objective and not to judge. I even said to her "Well there are some things that aren't labeled Gluten Free that don't have gluten" and she said "No their aren't" and changed the subject...

    I agree!! All the cheeses I've looked at do not contain gluten, but I'm sure there are some out there. I just wish they would label the product Gluten-Free so we wouldn't have to try to interpret every ingredient!!

It's just that most of the people who I've come in contact with who are against anything that's not organic make me very uncomfortable, because I don't have the same beliefs and I just do not like it when people try to convince me to change what I know is right for me...

    I can eat McDonald's fries and never feel any effects, and so far it seems as though I am very sensitive. Our local McD's restaurants don't fry anything in the same grease that they fry the french fries in, so they are safe for us. I do know that I have gone to some NON local McD's restaurants and seemed to have a reaction so it probably depends on the way...

    It can definitely effect behavior. My daughter has the worst temper tantrums I've ever seen and I've worked in child care for over 12 yrs. now. She totally goes balistic and it goes beyond just getting her way and her behavior changes when she is not getting gluten.     I think Hydrolized Wheat Protein is one and I'm pretty sure vegetable protein is another, but I'm not positive so don't hold me to that. I'm sure someone else can give you a better list. Does anyone know if toothpaste has gluten. I've heard it does but all mine lists is fluoride, anyone know for sure?????

    I've never heard of either of those two brands of ice-cream I'll have to be on the lookout for them hehe!! I'm beginning to think I'm going to get huge on this diet between the candy and ice-cream lol!! I think my sour patch kids are gluten free too YUM!!

    I've been wondering the same thing. I've also been looking at salsa labels and can't seem to find anything that looks suspicious in them. I'm sure someone will be able to tell us why ;-)!!

    I don't understand why you would want to introduce gluten back into your diet. If you only ate breadcrumbs and had that kind of a reaction and are still feeling the effects then you should definitely NOT eat gluten again!!
