Hmmm...interesting question. Putting aside height, as you said, when would puberty occur? Or would it be missed altogether? Sounds good. The problem with celiac is that no one knows how each individual is reacting and how much is being absorbed, even during gluten-free recovery. What we tried to do is to supplement so that at least the minimum would be absorbed, because the premise is that during the gluten-ingesting period, not enough was absorbed. The study that I posted the link to earlier said that they administered 6000 IU of Vit A per week and 12 mg of Iron per day. So your Carlson's looks pretty strong. Toxicity of Vitamin A for a child at your son's weight would occur at 67,500IU per day, according to Wikipedia, so you're still pretty low. But perhaps he should only take one softgel per day... -

Yes, they are very similar. We'll never know if going gluten-free caused all these changes in my son, but we believe it did. Couple things: Studies say that adults take 2-5 years to heal their intestines to allow adequate absorption of vitamins/minerals, but children may heal in 6 months. And - I am an example of this - you can have negative blood tests and intestinal damage. My new internist (who is herself gluten-free but not celiac) says that NOBODY should eat gluten (except perhaps Asians with double DQ4).

I too think that the symptoms will go away. I have to say to hang in there...the Mirena was he best thing to ever happen to me, BC wise. I wish I had had it put in years earlier. It is worth it.

So far, you and I are the only ones. I haven't found any link in medical journals but like other diseases related to celiac, there isn't much research because celiac is relatively rare and fuchs is more rare. Have you had any cornea transplants?

Many of the folks I know with colitis have celiac too. I think (and hope) that you'll be able to get it under control. Try a whole-foods diet: Eat white rice (plain maybe some salt or olive oil if you can't stand it), chicken or turkey (get plain, raw chicken and cook it plain), green beans, cooked pears. Eat just these things for a few days - breakfast... -

I think I used a 15 or 16 oz ricotta. I think it wouldn't matter very much either way. Maybe I'll try it with marinara only instead of bechamel, as I'm losing weight and watching calories so I've been craving it, but haven't given into temptation! -

I agree with this. I had a co-worker who claimed to be allergic to many foods including wheat. But she'd eat it anyway, and thus lowered my credibility. My local Whole Foods/paycheck has all the gluten-free products grouped together in the front of the store when you walk in. They are almost never out of what I need, although I don't go there as a first choice. I think that if you use too much cornstarch it does make the result like jello. But I use cornstarch (reduced amount) in all my sauces that call for a flour roux. But this is what I do: The directions for cornstarch say to use half the amount of cornstarch as the recipe indicates for flour. For example, if a recipe calls for 1/4 cup (which is...
