  2. I love this recipe, David! I wonder if the doughiness was because it wasn't rolled out enough? I roll it out even more than 12" because it makes a thin 'n' crispy type pizza. BTW, I use a small amount of oil instead of rice flour to roll it out. It is less floury and makes a nice crisp on it.
  3. Here's my next two results. Tried folding the whipped egg whites into slightly risen dough. It didn't rise much, but it tastes nice. I wouldn't count on it for sandwich bread.   4. Thanks for all the replies. He has been gluten-free for a while because our home is gluten-free. The acne started after he'd been gluten-free for over a year. His lips are really dry now. I bought him some Burt's Bees honey lip balm. I HATE lip stuff because it always seems that I can't go without it once I start. Maybe that's the addicting part....
  5. I buy dried egg whites in bulk from Rose Acre Farms. If you haven't ever used dried eggs before, they're kind of weird. They take awhile to absorb water--like five or ten minutes. I know there are some protein shake recipes on their web site. HTH

  8. I use pure egg white powder. I'll email the company and ask what the ratio is for reconstituting. Would more baking powder throw off the nutritional values?   9. Neither of my loaves sank using glass loaf pans at 350. I only left the oil out of the first one. I didn't mention, I do use dried egg whites.   10. Okay, here's what I got last night. The loaf with beaten egg whites is far closer to the texture of Udi's. It does have too much water though because it remained a batter. I did leave out the oil accidentally and it is the closest thing to french bread I've tasted.--so happy accident. The taste is close, but I think Udi's has more baking powder in it...

  12. One thing I can tell you is that Udi's is a DOUGH not a batter bread. If you look closely at the loaves, you'll see that they are rolled up prior to rising. This is a gluten bread technique. You roll the dough into a rectangle and then roll up, like for cinnamon rolls, but don't cut it, just tuck the ends under. I, too, have been working on this....
  13. Neti pot--that's the specialized thing for putting salt water up your nose? I don't have one of those, but I do a salt water flush when I have a head cold. It works so much better than any medicine and I believe it makes the duration less. And, other than feeling like you're drowning temporarily, there aren't any side effects. Totally safe for pregnancy...
  14. No, it doesn't say it CONTAINS wheat. It has the same CYA statement on it that many products have. I am currently looking at the bag. Ingredients: corn Allergy warning: MAY CONTAIN TRACES OF MILK, WHEAT, AND SOY.

  17. There are some potential difficulties. If you get sick with in future and tell drs you are gluten-free without a diagnosis, you may find them reluctant to treat you until you challenge it.   22. I'm a bit worried about it. It has so many nasty side effects listed! He only had one round of antibiotics and I think they did help. I didn't get to go to his follow-up so I didn't get to ask questions. I'd like to hear any experiences with it. I don't see much cystic acne on him as I understand it.
  23. When I was diagnosed, we knew we test the kids. We agreed that if any one of them were positive or near positive, the household would go gluten-free. It's been great. They actually never complain about it. They go to parties and just pass up the cake. I do believe that at least one will return to eating gluten when they get older. I'm okay with that...
