  1. I just experienced my first gluten free thanksgiving last weekend (in Canada). I helped to cook and made my own gluten-free stuffing and my mom made me gluten-free apple pie! YUM! I watched all the food like a hawk to make sure that the gluten gravy and gluten dressing didn't go near the veggies and meat. Thankfully, All the "gluten" foods were on the opposite...
  2. Most people who don't have celiac would consider me VERY strict and almost obessive or paranoid about making sure the things I eat are gluten free. I am like you, I refuse to eat "out". I have had a few bad experiences and have learned the hard way that it isn't always safe even if you order from a gluten-free menu! I eat things that aren't stamped gluten...
  3. I've done some research on this since I am wondering the same thing (I've been gluten-free for just over 7 months and still not better). I know how discouraging it is. There are a number of things that could be wrong if a celiac continues to have problems on the gluten-free diet: 1. There could still be gluten in your diet (unlikely if you're very...
  4. Hi Karen I'm sorry to hear that you have collagenous colitis but glad to hear that you finally know what's wrong and that it's treatable. I was interested in what this was so I was doing some internet research and came across these web site Open Original Shared Link Open Original Shared Link and it seems to me that this type of colitis is related...
  5. It's thanksgiving this weekend in Canada and I am going to be making my own gluten-free stuffing and pie! I was wondering if anyone had any good gluten-free stuffing or apple pie recipes. Thanks!
  6. 1. I've probably had celiac for awhile but my symptoms started getting worse last summer 2003 (I was diagnosed in March 2004). 2. I was 22 when I was diagnosed 3. Of coarse I miss all the typical gluten foods like bread, bagels, subs, hamburgers, but the food I miss the most is take-out pizza 4. It usually costs anywhere from $45-80/week. Depends...
  7. There are always going to be those self absorbed people that just don't get it or who just don't care. I know a few. I've also had people ask me if I can eat vegetables and fruit! It's quite funny actually!
  8. I have the book, Wheat-Free Worry-Free: The Art of Happy, Healthy, Gluten-Free Living by Danna Korn This book is very informative and basically covers everything to do with celiac disease. Although there is a lot of information that I already knew (from the internet, doctor, nutritionist) in the book, there was a ton of information that I didn't know...
  9. Quick and easy foods that I eat: - plain 100% rice cakes and gluten-free peanut butter - salads and gluten-free dressing - fish fillets fried with gluten-free margarine and gluten-free vinegar - fried streak (takes like 5 mintues if it's thin!) - veggies cooked in the microwave with margarine and salt - 100% rice pasta with ragu sauce
  10. hthorvald, Thanks for your reply! I am like 99.9% positive that I am not eating gluten and my medication is gluten free. I know when I have a gluten accident because a have a severe reaction. I have had a few accidents over the months and maybe those have set me back? I don't know......
  11. I was checked for iron and thyroid and they were fine (thankfully) and I have been taking a multivitamin and a calcium supplement (both are gluten-free) but I haven't been taking them faithfully. So maybe I should start taking them daily, hopefully that will help! Thanks!
  12. I've heard that too! Hope they're right!
  13. Gluten free pizza is actually pretty good! You can usually find frozen or non-frozen pre-made crusts in the the specialty sections of BIG grocery stores. Also Amy's makes a gluten free frozen Rice Crust Cheese Pizza: Open Original Shared Link If you try it just make sure that the pizza sauce and the meat (pepperoni/salomi) are gluten free. I use...
  14. Hi, Most people with celiac disease are lactose intolerant beacause; . There are also people that will just develop lactose intolerance and will always react to milk products even when the villi have healed. I react severely to dairy products and my body still can't tolerate dairy even after 6 months on the gluten-free diet. I try eating dairy...
  15. I'll answer a few... 3. I had a flu shot about 5 months before diagnosis 4. I was going through a stressful time before my worst symptoms appeared, nothing major, but stressful. 5. see #14 10. I have a family doctor and a GI specialist, both are in agreement with my diagnosis. 12. I react to dairy products (Not sure if I'm intolerant to lactose...
  16. Thanks! I'll try eating more protein and see if this helps. -Carrie
  17. I think I may be able to help. I think the test (#3 on your list) is called Tissue transglutamase Here is a link to a laboratory test information guide for this test: Open Original Shared Link If this was the test you had and you had a reading of 13 than I think it means you MAY have tested positive for celiac (I'm not a doctor!). It says on the...
  18. Yes, I would say that the gluten free Kraft dressings are safe to consume since they would clearly label if gluten was present. I've been eating the gluten free and lactose free dressings with no problem and I am super sensitive. I have a salad almost every day and the gluten-free Kraft dressings really make my salads taste better!
  19. I have been gluten-free for over 6 months now. I have more energy than I used to before going gluten free but my energy levels are no where near where they were a year and a half year ago (Before I started having nasty symptoms). I am just not the same person I used to be! I used to be able to play a 90 minute soccer game with no problem and now I am losing...
  20. I would definitely take some gluten-free food. When I go away or when I go to other peoples houses for dinner I almost always take my own food. Once I didn't take gluten-free food to a dinner/poyluck and I could hardly eat anything there! I had to ask everyone there what they put in the food they brought. I felt embarrassing becasue I felt like most people...
  21. Also, I appreciate food more now than I used to. I waste less food and basically cherish all my special gluten free foods. Like gluten-free bagels, and gluten-free bread.
  22. I eat a lot healthier now than I used too! More fruites and veggies!
  23. Wow! two weeks is a long time to wait for your results! Mine took about two days and it seemed like eternity!
  24. Pam, Yes I have tried the lactaid milk I seemed to do ok with it but then I was told to stay off all dairy from my doctor a few months ago. I don't know if I'm lactose intolerant or casein intolerant but I'm not going to try any dairy products until my current GI symptoms decide to go away.
  25. Hi! I know what you mean about the hamburger buns. I get annoyed when EVERYONE else is sitting there eating their hamburgers with real buns and I have to eat one of those gluten free buns that crumble and fall apart. The worst for me is pizza since I am also lactose intolerant. I used to love regular gluten pizza! Now my gluten free pizza can't even have...
