  3. Yes, my gluten reactions are definatley worse than they were before. For me, the reactions are bad for the first week or so, and then it takes about another week to feel better again. So, 2 weeks... I think that is the norm. The best thing to do is to try and get lots of rest and let your body heal. Try and eat things that aren't hard on your stomach like...

  9. I have only had gluten through contamination or accidents since going gluten-free. When I get contaminated I'll have GI trouble (gas, bloating, D), fatigue, lack of energy, brain fog, dizziness, mild-severe upper abdominal pain, and just recently dh (Dermatitis Herpetiformis).

  12. Yes, the gluten-free rules on maltodextrin can change for each country. In Canada, you have to call the company or check another valid source to see if it is safe.

  16. I usually store my flour in tightly sealed plastic bags or in a bag in a tupperware dish. They can be stored in the fridge or just a cupboard. If the seals are not tight, than little insects can get in and lay eggs (I know that is gross but it can happen!) I would think that flour should be good for a few months. Someone else may know a more specific time...

I've only been to BC once so I am not very familiar with the place. I'm just wondering becasue there is a very slight chance that I may be traveling to Vancouver, BC in October.

  23. I think the only time that you might be concerned about consuming gluten from animals is if you were on Fear Factor ( ) and had to eat something gross like cow/pig stomach or intestines. I don't think anyone would willingly eat that stuff, but you never know!
