ARCHIVED Tests All Negative - This Does Not Help Me!zarfkitty replied to cdog7's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I can't claim an "official" diagnosis of celiac, either. I don't even have the celiac genes. But I have rock solid proof that I have an immune response to gluten: I eat gluten, I get sick. So I call myself a celiac because that is best word to describe my body. It's not like anybody has ever asked for my membership card! Please listen to yourself...

ARCHIVED Accomodating Celiacs At Potluckszarfkitty replied to acousticmom's topic in Coping with Celiac Disease Our entire family eats gluten-free and attends a Lutheran church. (Lutheran = potlucks at least once a month. ) I don't have any particular ideas to add, but here are my experiences: One woman at our church always brings the most amazing baked beans to potlucks. Because we are friends, I was able to ask her about the ingredients and the preparation...

ARCHIVED Frito Lay!zarfkitty replied to pinkscooby6's topic in Gluten-Free Foods, Products, Shopping & Medications I wonder if Frito-Lay products vary in safety by region. At a support group meeting, someone told me that the products processed in the Plano, Texas plant were safer than other Frito-Lay products. This was only her subjective opinion based on eating Frito-Lay products on road trips that had been processed at other plants. Since I live in Austin, most...

ARCHIVED First Gfcf Christmas -- Gluteny Giftszarfkitty replied to zarfkitty's topic in Coping with Celiac Disease Thanks to everyone for your support! This is the best forum I've ever belonged to. Just for the record! I have been properly taught my manners. The thank you note went out in the mail immediately and I absolutely know the family didn't mean anything by it. I know that $40 is amazingly generous for a teacher gift. I would never, ever ever ever ever...

ARCHIVED First Gfcf Christmas -- Gluteny Giftszarfkitty replied to zarfkitty's topic in Coping with Celiac Disease Thanks guys. I've realized I have a reason to celebrate: this will be the first Christmas in a very long time that won't cause me to gain 5 "holiday pounds"!

ARCHIVED First Gfcf Christmas -- Gluteny Giftszarfkitty posted a topic in Coping with Celiac Disease I haven't posted in awhile... mostly because we're rockin' and rollin' on our diet and I'm uber-busy. But I really need a gluten-free friend today! I just received a $40 gift certificate to California Pizza Kitchen as a Christmas present from a mother of a student where I teach. Luckily I didn't have to open in in front of her or the student, I would...

ARCHIVED What Is A 504?zarfkitty replied to sammers1's topic in Parents, Friends and Loved Ones of Celiacs You don't sound ignorant, don't worry! A "504" is a document that enforces section 504 of the Americans with Disabilities Act. The law says that people with disabilities have to have equal access. Most of the time, when someone has a "504" it's a document at a school that states what accommodations must be made for the student for the student to have...

ARCHIVED Looking For Celiacs In Austin Txzarfkitty replied to gccoyote's topic in Introduce Yourself / Share Stuff Alamo Celiac has a chapter in Austin. I've been to one of their dining outs at Central Market (gluten free pizza - yum!) and had fun. I've seen lots of people from Austin here on this site, too. Are you newly diagnosed?

ARCHIVED Does Anyone Else Hate The Activia Commercials?zarfkitty replied to cgilsing's topic in Coping with Celiac Disease Here's another log for the fire: Drink 24 oz of milk in 24 hours and you'll lose weight! God, that annoys the heck out of me. I'm very biased against the dairy industry, I'll admit it, but if I drank all that milk it would kill me. Who needs to be skinny when she's dead? I also think the talking shredded wheat is annoying. All IBS commercials...

ARCHIVED Why Bother To Have An Endoscopy?zarfkitty replied to Shawn's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I personally think you should decline the endoscopy. A firm diagnosis of DH is a firm diagnosis of celiac. Have you had the DH biopsied? In any case, you don't need a prescription to stay on the diet, so feel free to tell the doctor to scope himself instead if he's so keen on it.

ARCHIVED Whey And Casein?zarfkitty replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease My advice is to go off dairy completely (including whey) for awhile before you try something like that. Then you'll know if you are reacting to it. You won't be casein-free if you eat whey. You'd be more like casein-lite.

ARCHIVED Confusion Enerolab?zarfkitty replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I think your dogs are likely suspsects here! Check their food and biscuits for gluten ingredients! We continue to feed our dog as we always did, but we always, always, always wash our hands after any contact (food or play) with the dog. Also, have you segregated your kitchen stuff from the gluten eaters in your house? You can share dishes, stainless...

ARCHIVED Confusion Enerolab?zarfkitty replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease Do you live with gluten eaters? (Maybe your adorable furry friends?) Could you be getting gluten on old cookware or through your cosmetics and personal care items? Do you take communion at church? The stool test is supposed to be way more sensitive. Maybe those high numbers are "down" for you. Since you don't know what your Enterolab numbers were...

ARCHIVED Difference Between Anti-gliadin And Tissue Transglutaminase?zarfkitty replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease Anti-gliadin is an antibody for gliadin (part of the gluten molecule). If you have it, your body has identified gluten as an enemy. Tissue-transglutaminase is an enzyme that works on gluten. If you have an antibody against it, your body has identified one of your own enzymes as an enemy (hence the label auto-immune disorder). High numbers mean that...

ARCHIVED Whey And Casein?zarfkitty replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease The protein in whey is lactalbumin (casein is the curd), but the CC risk is pretty high. I eat chocolate with "may contain traces of milk" warnings every once in awhile. My main casein symptom is a horrible acne break out and upscale dark chocolate doesn't break me out. I could take or leave chocolate. It's cheese I really miss. I read a study out...

ARCHIVED Rolled Oats ? Gluten Free?zarfkitty replied to ConnieA84's topic in Coping with Celiac Disease I did a quick google search on "wheat allergy oats" and the wheat allergy community doesn't seem to be as concerned with it as we are required to be. That doesn't really answer the question though... now I'm curious!

ARCHIVED Rolled Oats ? Gluten Free?zarfkitty replied to ConnieA84's topic in Coping with Celiac Disease I think it's because the avenin in oats is so similar in form to gluten. So a small amount can "fly under the radar" but if you ate enough in one setting it would set off the gluten detectors in your gut. I'm just guessing though. (Not about avenin being similar to gluten; about amounts of safe oats)

ARCHIVED Rolled Oats ? Gluten Free?zarfkitty replied to ConnieA84's topic in Coping with Celiac Disease This was posted to my local support group today: Consumption of pure oats by individuals with celiac disease: A position statement by the Canadian Celiac Association. Can J Gastroenterol. 2007 Oct; 21(10): 649-51 Rashid M, Butzner D, Burrows V, Zarkadas M, Case S, Molloy M, Warren R, Pulido O, Switzer C The treatment of celiac disease is a strict...

ARCHIVED School Carnival Nightmarezarfkitty replied to zarfkitty's topic in Parents, Friends and Loved Ones of Celiacs Update #2 I wrote an assertive but friendly email to the campus principal. She (luckily) was headed to the PTO board meeting when she read it. The PTO was in charge of the carnival. She said they received my criticism well and, just as everyone predicted, none of them knew that flour could be dangerous. The PTO is working on solutions for a fun...

ARCHIVED Exciting Halloween Suggestion For Trick Or Treatzarfkitty replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs What great ideas! Here's another one: This is my daughter's first Halloween with dietary restrictions. She's going to trick-or-treat for UNICEF instead of for candy. (I already bought a bunch of Gluten-free Casein-free candies for her to pig out on at the appropriate time!) Trick-or-Treat for UNICEF is a great way for kids to help other kids and...

ARCHIVED Can Anyone Translate This Medical Garble?zarfkitty replied to i-miss-cookie-dough's topic in Coping with Celiac Disease It translates to: Your immune cells (lymphocytes) are tearing up the tiny "fingers" in your intestine called villi. You need your villi to be able to absorb nutrients from your food. Gluten is the protein that your lymphocytes are trying to get rid of. They will attack your own body tissues to get rid of the gluten. Please let us know if there...

ARCHIVED School Carnival Nightmarezarfkitty replied to zarfkitty's topic in Parents, Friends and Loved Ones of Celiacs Update: My daughter is home sick today (all symptoms point to an upper respiratory infection, except nausea which is definitely from the snow balls) so she didn't have to face the gluten mine field of her school's front yard. It's also rained really hard all day so it should be safe for her to return to school. I am going to have my little "teachable...

ARCHIVED Rolled Oats ? Gluten Free?zarfkitty replied to ConnieA84's topic in Coping with Celiac Disease Some celiacs can tolerate oats and some cannot. If you decide to try oats, you need to confirm that they are gluten free. Mainstream oats are almost always contaminated with gluten from processing. To get oats that are guaranteed to be gluten free (grown in dedicated fields and processed on dedicated equipment), try ordering some off the internet. They...
