  1. Is gorgonzola cheese gluten free? I know bleu cheese and roquefort are made from molds usually grown on wheat bread, so those are NOT gluten-free. However, is anyone familiar with the ingredients in gorgonzola cheese (which is often used at Italian restaurants)? OK, this is unrelated to my cheese question, but still a gluten-free product question...

    ARCHIVED Newbie

I learned I was gluten intolerant (described my celiac symptoms to a naturopath who said skip the tests, go gluten-free ASAP) 6 weeks ago. After previously learning how to control my weight with a nondiet approach (eat ONLY when hungry, foods which really satisfies you, and STOP eating when satisfied NOT stuffed), I wanted to avoid feeling deprived when...
  3. There are many more protein options besides meat which I could suggest, but first I need to ask whether you are avoiding dairy products. Since you mentioned you eat ice cream, perhaps you don't avoid dairy. I discovered I was lactose intolerant before I learned I was gluten intolerant, so I have been using 'Lactaid' supplements to consume dairy for years...
  4. I agree with Tiffany and others that an anxious overreaction to stomach pain is definitely 'psychological'. However during my counselling training and experience, I observed and believe that physical illness (esp. pain inducing illness) DOES change people's basic outlook on life. I'm a basically optimistic person with a strong faith that God loves me, will...
  5. I wanted to add my experience with the 'IBS' diagnoses. Over 7 years ago I finally found a primary care doc thru my HMO whom I considered caring and sensitive. So I told her about my chronic symptoms of bloating, cramping, excessive gas, occasional diarrhea and occasional constipation, but mostly just feeling like I 'had to go' whether I did or not (probably...
  6. After struggling for at least 10 years with 'IBS' symptoms, I FINALLY learned I had celiac almost 2 months ago and immediately began eating 'gluten free'. When I stopped experiencing the pain, I could easily overeat, because the painful bloating from consuming gluten no longer made me feel prematurely full. Rather than eating from pain (of starving because...
  7. Does anyone have a recipe for a cheese sauce which I can freeze? I want to use "Velveeta" (which is gluten-free according to the CSA product listing guide) but I don't think cornstarch as a thickener will tolerate freezing/thawing. I have observed other cornstarch-based sauces collapse after freezing/thawing. I want to make a casserole with cooked cauliflower...
  8. Hi Bessiejay and others who responded to this topic: I suspect there are lots of us out there who struggle with celiac AND 'disordered eating'. Since I discovered my gluten intolerance, I have posted on my webpage topics about "IBS and other useless diagnoses" and "What foods are Beneficial for me?" to alert other members of my online support group about...
  9. Hi Bessie: I recovered from anorexia and bulimia and recently learned I have gluten intolerance (celiac). Part of my ED recovery process was learning to obey my own body cues of hunger and satisfaction to ONLY eat when I was physiologically hungry and STOP when I was satisfied (before uncomfortably full). Before I got gluten free, I used to eat from pain...
