ARCHIVED Gf But Fatigued..
burdee replied to solarbound27's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've been gluten free 11 weeks and dairy free 5 days. I felt a little more energetic when I went gluten-free (possibly because less pain made me feel more like moving around). However, I really noticed a big resurgence of energy when I cut out dairy. Even when I don't get enough sleep (5-6 hours, rather than my usual 8 hours), my MIND is still awake. I... -
ARCHIVED Lists Of Gf/cf Foods
burdee posted a topic in Gluten-Free Foods, Products, Shopping & Medications
When I just about got the gluten free thing under control, I learned I have to also avoid CASEIN, rather than just using 'lactaid' supplements to consume dairy. So I can't have ANY dairy OR gluten containing products. WHERE DO I FIND LISTS OF GLUTEN FREE AND DAIRY FREE FOODS? WHERE DO I FIND LISTS OF DAIRY CONTAINING FOODS/INGREDIENTS TO AVOID? I looked... -
ARCHIVED Gum...what Kind Do You Chew?
burdee replied to Connie R-E's topic in Gluten-Free Foods, Products, Shopping & Medications
Tarnalberry: OOOPPSS! Is recaldent included in Dentyne and Bubble Yum as well? I could only see: sugar, gum base, glucose syrup, artivicial and natural flavoring, softening (including soy), BHT and red 40 lake, on Dentyne. Don't have any bubble gum in the house. Which of those ingredients (if any) would include recaldent? BTW what IS recaldent? Maybe... -
Hey Carol: FIVE DAYS!!! The first 3 were HORRIBLE. Of course I had been gluten-free for almost 11 weeks, so everything else improved after eliminating dairy, too. Hang in there and avoid gluten and dairy 'like the plague', because our intestines think they are! BURDEE

ARCHIVED Sandwich Subsitute
burdee replied to flagbabyds's topic in Gluten-Free Recipes & Cooking Tips
Thanks Richard and Molly: It WAS deli counter sliced turkey that zapped me. When I asked to look at the wrapper the next day, it included broth from wheat and something else (I forgot) which was derived from gluten sources. But I'm sure deli cross contamination also may have played a role in my recurrence of symptoms. I have NOT tried many package meats... -
ARCHIVED Sandwich Subsitute
burdee replied to flagbabyds's topic in Gluten-Free Recipes & Cooking Tips
Catfish: Ener-G Foods will send you a bread sampler kit for $13.20 which includes 2 slice vacuum sealed packages of egg-free raisin bread, raisin bread WITH eggs, brown rice bread, hi-fiber bread, rice starch bread, Seattle brown bread, yeast-free sweet bread, white rice bread and (the dreaded) tapioca bread. However that kit doesn't include my favorite... -
This message is especially for Karen, who began this topic inquiring about excessive belching and gas: Since going dairy free after a bad reaction from 1/4 cup of milk (after 36 dairy free hours), I realized this morning (5 days later) that I no longer have belching and instant reflux after meals. I used to experience continual 'esophogeal reversal...

ARCHIVED Sandwich Subsitute
burdee replied to flagbabyds's topic in Gluten-Free Recipes & Cooking Tips
Doesn't anybody like gluten free bread for sandwiches? I wanted a burger bun last night for my turkey burger, so I used an Ener-G foods English Muffin with Sweet Potato flour. It's too thick to add turkey burger, thick tomato slice and lotsa lettuce like I prefer, so I sliced it horizonally 3 ways. I used the perfectly round bottom and middle layers... -
ARCHIVED New To The Board And Waiting
burdee replied to tyki's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Tyki: Here's an idea to help you decide whether to go gluten-free ASAP or wait while you do Enterolab tests: DO BOTH. You don't have to be gluten-free to have Enterolab tests show gluten antibodies, the celiac gene, malabsorption tissue damage. I'm not sure whether you've considered milk sensitivity (many celiacs have lactose intolerance and/or casein... -
OK, now that we're talking constipation and fiber ... that's what got me into my excruciating pain mess in the first place. I suspect my celiac symptoms had been constipation/gas/bloating/cramping all my life, but when my doc diagnosed 'IBS' and handed me the IBS constipation suggestions (which recommended lots of whole grains like wheat bran and stone...

ARCHIVED Gum...what Kind Do You Chew?
burdee replied to Connie R-E's topic in Gluten-Free Foods, Products, Shopping & Medications
I have ALWAYS reacted very badly to Trident because of the sorbitol (the indigestible sugar substitute). I would get intense cramping pains and diarrhea, very much like a lot of people get celiac symptoms, but my celiac symptoms were always delayed cramping/bloating and NEVER diarrhea (just the opposite ). I now stay FAR away from any sugar free gums and... -
ARCHIVED Candies
burdee replied to willamina's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks, Tiffany. You just helped me renew my membership in "chocoholics anonymous"!!! When my Enterolabs test said no gluten/no dairy, I thought I would have to give up all chocolate--I'm a Dove chocolate and Dove bar freak. Thanks to you I found that Tropical Source has dark chocolate bars (there's other flavors with nuts, but I'm a purist, preferring... -
ARCHIVED Desperate About Cheese
burdee replied to natro2's topic in Gluten-Free Foods, Products, Shopping & Medications
Are you sure you're not casein sensitive as well as gluten sensitive? That's not exactly a milk allergy, but an intolerance, like lactose intolerance. Can you digest other dairy products (than cheese) okay? I know plenty of celiacs (esp. newly diagnosed ones) who can't digest dairy products. Some are lactose intolerant, some also have casein antibodies... -
Karen and Newbee: Casein is milk protein. Lactose is milk sugar. If you have celiac disease, you might form antibodies to casein as well as gluten, so celiac challenged small intestines won't digest the milk protein either. If so, 'lactaid' supplements and lactaid milks won't help--those only help digest milk sugar. I used 'lactaid' to consume dairy...

ARCHIVED Candies
burdee replied to willamina's topic in Gluten-Free Foods, Products, Shopping & Medications
While we're on the topic of sweets/candy, does anyone know a source/brand of gluten free/dairy free chocolate? Being casein as well as gluten intolerant kinda eliminates all my favorite milk chocolate treats. I suspect even dark chocolate has some milk product. Are there any nondairy chocolates out there? Where can I get those, if they exist? BURDEE -
Hey Catfish: Thanks a bunch for the key lime pie recipe. YUM!! BURDEE

ARCHIVED Enterolab
burdee replied to concernedlady's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I received my Enterolab results this morning--exactly 3 weeks to the day when Airborne Express picked up my 'specimums'. So they were true to their promised 'turn around time'. My results just confirmed what I already knew from my own body's reactions: antibodies and autoimmune response to gluten and cow's milk. I suspected I might have to avoid casein... -
ARCHIVED Cd Symptoms?
burdee replied to burdee's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hey Kira: WOW! So many similarities. I ALSO had constipation (NOT diarrhea) and symptoms which my doctor labeled "IBS". That label and my misconceptions about celiac disease (that you have to have diarrhea as a primary symptom) kept me from considering celiac for YEARS, even after a naturopath pointedly asked me about celiac. Unfortunately, he must have... -
ARCHIVED Cd Symptoms?
burdee replied to burdee's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hey Kira: It sounds like we have the same nail problems. I've had the toenail problems for YEARS. The first (big) toe problems got worse after a biking accident in which I tore that right first toenail and a trip to the ER where they just bandaged it. I believed it got infected after that, because it got very thick. Then the other first toenail got thick... -
ARCHIVED Should I Be Worried About Margarine?
burdee replied to Canadian Karen's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks again, Mariann. I'll look for those. Tarnalberry: Thanks for your opinion. Now if only someone would make macadamia nut butter, I'd have my favorite nut in a spread. Maybe I should check the Mauna Loa site. I tried pure almond butter as well as pure peanut butter and didn't really like either. I LOVE Skippy's super chunk, so maybe I'll give... -
ARCHIVED Should I Be Worried About Margarine?
burdee replied to Canadian Karen's topic in Gluten-Free Foods, Products, Shopping & Medications
Hey Mariann: Thanks SOOOO much for the Nucoa margarine suggestion. Does anybody else know any gluten free, dairy free margarine or butter substitutes? BURDEE -
Catfish: Please post your keylime pie recipe. Now that I'm caseine AND glutton free, I'm also missing cheesecake. I used to LOVE keylime pie flavored yogurt, but I'm afraid to mess with gluten-free pie crusts. Maybe you have an easy pie crust recipe? I hope I'm not sensitive to soy as well. This is my second day of trying soymilk substitutes, but...

ARCHIVED Should I Be Worried About Margarine?
burdee replied to Canadian Karen's topic in Gluten-Free Foods, Products, Shopping & Medications
Mariann: Are any of those gluten-free margarines also dairy free? I can't put peanut butter on everything. Although I love olive oil on most vegies, is there a gluten-free/CF margarine or butter substitute I can use for my occasional baked potato. (However, I prefer a good red potato rolled in parsley and olive oil any day! ) Has anyone tried the other... -
ARCHIVED Soy/rice/almond Milks
burdee posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I just tried soy milk (Silk unsweetened soy milk variety) for the first time this morning. YUK!!!!! Perhaps I should have used a variety with more sweetening (rice syrup?), but I wanted to start with the original, unflavored and go from there. It's okay in coffee with sweeteners, since it has a creamy 'aftertaste', but just straight it tastes like really... -
More questions about SYMPTOMS: Does anyone else have fingernails which have vertical ridges and easily crack and tear? Is this a celiac related symtom? I also have VERY thick toenails on my biggest and smallest toes. My doctor waffles between declaring those toenail fungus and merely thick toenails, since my HMO really doesn't approve any of the current...
