I am one of those people that needs to have a bunch of apples from the orchard in the fall. Since I learned about the Celiac my baking has lessened and well a lot of apples are still in the fridge! We were grilling quite a bit because the weather warmed up and I thought, why not apples. Slice apples thickly and place in a bowl of lemon water so they...

ARCHIVED My Heart Is Broken

Somewhere I have a recipe I will look for it. It is really yummy and really easy BUT use the best and freshest spices you can, it really makes a difference. -
ARCHIVED Cheesecake gluten-free
bakingbarb replied to Anne Caird's topic in Gluten-Free Recipes & Cooking Tips
The problem for me with baking this way is that many times when I am baking cheesecakes it is for customers and I don't have the oven space to bake 4 cakes this way, nor the time. Since I top them beautifully I don't worry too much about the cracks. lol It doesn't affect the taste or texture so I again I don't worry about it much. If I am going to bake... -
ARCHIVED French Fries
bakingbarb replied to bakingbarb's topic in Gluten-Free Foods, Products, Shopping & Medications
We make home fries often enough but ya know that fast food french fry we can't eat anymore? Well thats what I miss. I went back and checked the Oreida thing again and tried their fast food fries and they were good! -
We moved here 5 years ago and we left behind a whole life, friends included. It seems so hard to meet people at times. Don't get me wrong, I have some friends here but everyone is always busy, myself included. I'm glad someone understands though. Which is why I come on here, its easy. Maybe thats part of the problem, the Internet is where I make...

I am wondering if the coconut flour being so high in fiber should carry a warning to not eat too much at one time, at least until the body adjusts? Yesterday I made a loaf of plain bread in the cookbook from Dr. Fife and well I ate at least half of it. Since the coconut flour is so high in fiber I wonder if it is like Flax, moderation at first? BTW I...

ARCHIVED Cheesecake gluten-free
bakingbarb replied to Anne Caird's topic in Gluten-Free Recipes & Cooking Tips
Ya know my Step Mom always made a cheesecake using a Duncan Hines Cake mix because she didn't like the dense heavy type and greatly preferred the cake-ier consistency also. I wonder if there is a gluten free cake mix that could be used in place of the Duncan Hines. I made cheesecake this week but again mine had no flour and was quite dense but we love... -
ARCHIVED How Would You Make This Chocolate Cake Gluten Free?
bakingbarb replied to nikken007's topic in Gluten-Free Recipes & Cooking Tips
Hmm, I think this type of cake usually is made with the darker chocolates, if you used a sweeter semi sweet chocolate it changes the style of the cake. I didn't use this recipe I found one that I think made a perfect cake. I would not use xanthan or "flour" at all, this is doesn't need the affect of the xanthan, it isn't that type of cake. This isn't... -
ARCHIVED Cheesecake gluten-free
bakingbarb replied to Anne Caird's topic in Gluten-Free Recipes & Cooking Tips
I never put flour in my recipe. Thats to help it to not crack but if your careful with your baking it shouldn't crack! That said, mine almost always crack! BUT really you don't need it. -
ARCHIVED I Really Dont Know What To Do Anymore! Help?
bakingbarb replied to LuvMoosic4life's topic in Coping with Celiac Disease
I second this, especially the wavering part. NEVER EVER waver. At first I felt like I was a burden to my family and it took a few months for that to change. I think there is a process we go through and if our families don't see us going through it, it is harder for them to understand. BTW if your whole family has digestion issues then I don't need... -
I was told that too one time when I had gotten sick. I only got sick because I saw the offending food, not because I ate it. I wanted to hit the person, they were being such a jerk and this comment topped it off.

ARCHIVED What Can I Make With Steel Cut Oats?
bakingbarb replied to maddycat's topic in Gluten-Free Recipes & Cooking Tips
Can you grind them a bit in the blender then you could use them for flour or such. Also you can presoak any grain in buttermilk and use it for bread. SIGH I could have told you how to do this before I went gluten free, I have no idea how to do it this way. LOL I would have said soak some in buttermilk then add some fat, sugar, salt, yeast and some... -
ARCHIVED So Much For An Education..

Good luck with this. I have a friend who's sister teaches at a University in Canada (srry don't know which one) but she was quite ill and they tried to fire her. In meetings they were all nice but then they pulled all kinds of crap on her. She took it as high as she could and kept her job but it seems similar. Makes you wonder about people. -
ARCHIVED La Choy Soy Sauce

I'm not sure why I had such a strong reaction to the Sun J when I first brought it home. It almost knocked me back! So I waited awhile before I got it out to try. I did try it and I am happy to report I like it! Honestly I am surprised after that first reaction. I grew up with La Choy so to me that was what it was supposed to taste and smell like... -
ARCHIVED The American Idol Thread...2008
bakingbarb replied to blueeyedmanda's topic in Introduce Yourself / Share Stuff
Oh goody I just found this thread. I love American Idol but don't admit it to people! LOL I agree with everything you just said. David Cook does seem over-confident. The first time I saw him though I thought of The Joker, the way his mouth/smile is! I know thats bad. Archuleta is a good singer but boring. The girls seem to love him though... -
I just started a new job (super happy dance) and its great but not super busy and its part time, it isn't going to be a strain in any manner. The job is perfect really because the people are so nice but its a small co so not a lot of people, the pay is great and I love the part time aspect. Summer weather isn't really here yet so I haven't done much in...

ARCHIVED Tired Legs
bakingbarb replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
LOL I am not going to "run" out and buy some milk of magnesia, pun intended! I did buy some calcium that has magnesium in it. I had just read that our body needs the magnesium almost more then the calcium. I don't know where I was reading that at but they were talking about osteoporosis and how much we need the magnesium. My problem is I don't take mine... -

I have been staying away from it as I thought it was something we were not supposed to have. There is so much conflicting information that makes this especially difficult. -
ARCHIVED Tired Legs
bakingbarb replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Well, they say that if you exercise no matter what your illness it will help more in the long run. I don't know what happened because I was always active before. Now I tell myself I need to get out there but I just don't do it as often as I could or I should. -
ARCHIVED Prasie God For Snickers
bakingbarb replied to Blessings's topic in Gluten-Free Foods, Products, Shopping & Medications
This is good to know, I am tired of walking up to the register and looking away from the candy staring me in the face! LOL Maybe I should look at it like its a good thing, less snacking. NAW I want a candy bar I don't have to go to a different store so I can find something safe, just something normal sometimes is nice. -

You are a really good example, you eat healthy, you exercise, get plenty of rest and take your supplements and you still have this. Yes, what else are we to do. The only thing I can say is I'm thankful for all of you because otherwise I would be clueless and alone on this whole thing. I'm not thankful we have this to deal with though but I am thankful...
