Gluten-free foods in general take a large toll on our family budget, not only to buy specialty gluten-free products themselves, but to purchase so much fresh produce and meat without additives that I feel helps balance my diet. Everybody gets glutened while they're learning, I'm fairly certain. I'm over a year into this and just got some tonight : (. It's easy to get bogged down by carbs on the gluten-free diet, they still give me trouble. You of course have rice and potatoes to choose from. Any corn products - corn bread (homemade, that is), corn tortillas, corn itself are carbs. I agree, could be the soy. Can you eat other things with soy? Might test it out before you eliminate. Another thing to check, flip the package over and see if it says they are manufactured in a facility that also processes wheat. I see that statement on gluten-free foods all too often. Kinda makes me laugh...but I prefer not to purchase it. -

I've counseled a few diabetics that were not overweight and did not know how they developed the disease. What they all had in common - a low carb diet. Opium pockets? First I've heard about this... Runlikeagirl - the only thing I might recommend is a multivitamin if you start craving gluten. Or at least taking extra care to find B vitamins in your diet, depending on your feelings toward vitamins. -
Yep, not much to do 'cept let it pass. I used to dream I ate regular bread or cookies and would wake up panicked not knowing if I really did it or not... Had to check to see if my pants still fit to tell... I think that's when you know your mind is gluten-free'd out! Maybe the hubby can bring you warm compresses and tea....

I rarely use bulk bins, but if i do I follow the following made up rules of mine: If there are gluten products within 4 to 6 bins in any direction it's a no go. If the bin has a scoop, it's a no go. If the bin has a turn dial and the product falls out the bottom, I'll consider it. To be on the safe side, buy raisins in packages, yes? Much less worry... -
Concentrated carbohydrates (fruit) are renowned for causing dumping, unfortunately. Do veggies have the same effect? Also, lactose free milk isn't completely lactose free is it? First, the "not enough gluten" - the tiniest amount of gluten will cause the same autoimmune reaction that attacks your body and does damage. Each time you are glutened - either by cross contamination or by eating a wheat bagel - you become less likely to respond to the diet, and you have done 3 months worth of damage to your body. If anybody is basing anything on a study with 40 people, they need their heads checked. My hope is that this study is going to be a jumping point for much research to come.
