My first line of questioning would be are you used to consuming fiber, but I see you already thought of that. I just noted to my boyfriend that fruit allergies are becoming more and more common. It is certainly an atypical case, but most cases of Celiac are. From what I understand (and I do need to brush up my reading, I'll admit), the blood tests currently used to test the efficacy of the gluten-free diet are not as sensitive as they might need to be. It sounds like you have a really positive attitude and that is awesome . You're 100% right, but you do have to be careful in what you choose . You're 100% right about the folate in greens as well . I only suggested the supplement because (much to my dismay) the folate in greens is not absorbed very well. I totally agree with the substitution. Carol Fenster has a great sandwich bread recipe you can find online (just google "Carol Fenster sandwich bread gluten free"). It's not the same, but it's good. You also might see if he would be willing to keep a list of things he is craving. Then set up a time where the two of you can look up gluten-free recipes...

What exactly do you feel is causing brain fog? I mean what is going on is not necessarily damage. If you understand the cause I would recommend avoiding it of course. But things such as dehydration, a mild protein or vitamin deficiency, lack of exercise, too much exercise can all cause "brain fog." It is not necessarily a terrible ailment, not to say... -
So I agree with everyone else that this is not a gluten or gluten free problem. You may have a urinary tract infection. Sometimes those come without symptoms. I don't know if your back ever bothers you, but I had a very slight bulging disk in my back that damaged the nerve to my bladder. I would "leak" a bit. What helps for me is to lean forward...
