  1. I just tried one like this. It turned out great but I cooked it for 12 mins (but you might want to start checking it at 10 mins because once it starts browning it goes quick). I used a glass pie pan and a temp of 350. I prebaked it for a cheesecake. I used 1 cup of almonds and then ground them. 2 tbs melted butter 2 tbs sugar...
  2. Well that gave me something to think about. I did give up sugar once, and slowly it came back into my diet. I measure 1/2 tsp of sugar in my coffee so I don't go overboard. So I eat a lot less sugar than I used to. I may give it a try tomorrow and see what happens. That will be easier than doing a fast. I normally have tea with honey in the morning...
  3. Hi, I thought this recipe sounded great so I am trying it. In one place it says to add poultry seasoning but in the instructions it says to add savory and sage. I was wondering which it was supposed to be. Thanks, Susie Quinoa Casserole Preheat oven to 375F 8-10 cup baking dish with lid, ungreased Ingredients:
  4. Thank you Gail. I actually feel like I have an ulcer although I have never had one so I really don't know what one feels like. LOL I keep feeling like I need to eat to soothe my stomach but when I do I bloat. I just had some carrot juice and I bloated. I started trying to not eat gluten on Friday. And I was actually doing really good until I had a cup...
  5. Once something aggravates my bloating into high gear, no matter what I eat, I bloat. By the end of the day I am really bloated. It seems like each thing bloats me a little more. I have read other say it is an IBS symptom. I was wondering if it is also a Celiac symptom. If bloating is from eating gluten, then not eating gluten should stop the bloating...
  6. Hi Nyxie63, You sure know a lot about this stuff. How did you learn so much about the thyroid? I did a fast last January, and I am just now having problems again. I did a 3 day "carrot/apple/ginger juice mix" fast. It was a long 3 days but it was worth it. (Now I'm starting to wonder if it helped to heal my stomach, hmmmm?) Ginger is good for...
  7. I have a grain grinder so I ground up some rice and the coconut was not as fine as the rice flour but I didn't think it was bad. I was thinking that maybe dehydrating the coconut flakes a little bit before grinding might help to make it finer. I love the Vita Mix for oatmeal flour. Susie
  8. I'm cheap and my health food store doesn't carry it anyway, so I'm looking for ways to grind my own. Someone said you can take dessicated coconut and grind it, but I took the flakes and ground it in my Vita Mix and it seems okay. A little coarse but I might give it a try later. Has anyone else tried grinding the flakes? I bought the coconut book and the...
  9. Anybody can be a doctor in this day and age. All you have to do is know how to order blood work and xrays. The majority of doctors rely totally on blood work or diagnostic tests, and if it's not on a piece of paper telling them what it is, they don't know. (Does it sound like I'm bitter, yep) All I can say is thank goodness for the internet, or you might...
  10. Hey Nyxie63, I was supposed to received notification when someone replies to the message but I either missed it or it didn't get in my mailbox. Anyway, I read that Celiac disease and thyroid are pretty common together. I don't know that I have Celiac disease for sure (nor do I want it) but I'm having some major stomach pain when I eat. I have had...
  11. I remember having the cracks in the corners of my mouth and boy is that painful. I did read on the internet about the B vitamins and haven't had it since, and that was several years ago. The thing that bothers me, is I have been taking a multivitamin with vitamin D and yet I still have a deficiency. If you have a problem absorbing vitamins from food,...
  12. I've been taking sublingual b12 and I take a biologically active b complex that doesn't have to be digested, so I'm assuming that's why those levels were okay. I'd really like to know what my Vitamin A levels are because I have some major eye issues. They did do a TRAB which was "less than .03" and a TPOab of 16 iu/ml but I don't know if they are negative...
  13. Oh no....I didn't realize the starter could not be regular sourdough. I read that celiacs could tolerate sourdough if it was fermented for 24 hrs and was only 30% of the dough. I had planned to change to whole grain spelt. I believe I read that our current supplies of wheat are GMO wheat and that it has changed the gluten proteins. And that the heirloom...
  14. Hi, I think I may have Celiac disease. I'm supposed to have IBS but now I have been dx'd with a thyroid disorder and I read that Thyroid and Celiac disorders can go hand-in-hand. I also have been dx'd with a vitamin D deficiency, which was a shocker considering that I have been taking multivitamins for 10 yrs and eating healthy to boot. So has anyone...
  15. Ginger tea is good for nausea. I make homemade and also buy a tea called Eater's Digest by Traditional Medicinals. For homemade, you just cut off a piece approx 1 to 1 1/2 inches and then slice it and put it in 2 cups of water and simmer for 20 mins. Then, add some honey. It's really strong and has a bit of a bite to it, but it really helps. I don...
  16. Hi, Don't get a Vita Mix to grind grain. Get a grain mill. I've heard people who were dissatisfied with the Vita Mix on grinding grain and said there was a big difference after they purchased a grain mill. I have a Wolfgang grain mill and it's great. It costs about the same as the Vita Mix. A Vita Mix is great for smoothies with crushed ice. Susie
  17. Don't give up. I started my starter the middle of October and I have made the most fantastic breads, cupcakes and biscuits. The pancakes stunk though, so I'm still working on them. However, I'm here to find out about sourdough and celiac disease because I'm pretty sure I have it because I have vitamin deficiencies and autoimmune thyroid. So how...
