  1. YOu will need something. I have heard of people doubling the amount and using gelatin. I don't know about it's safety but you will only be using 1 or 2 teaspoons.
  2. YOu could put pb and j on rice cake or corn thins. Or dip some pretzels in the peanut butter. Bananas are easy to carry around. There is a lot of debate on Slim Fast being gluten free, you could try that. Or another drink that you feel safe drinking. Pudding cups would go with the bananas.
  3. I have the Nearly normal cookbook and I have loved everything I've made from it. I keep a Lock and Lock of 'nearly normal' flour that I make myself from the book. The recipe for those chocolate chip cookies are in the book and everyone who eats them says they are the best they've had. She also has a recipe for graham crackers that are very good. I didn...
  4. While I was waiting for the page to load I was thinking about Cocoa Pebbles.
  5. I didn't have my daughter biopsied either. The doctor who dx her said that the blood tests were pretty acurate now a days and said to skip the biopsy. I put her on a gluten free diet and saw major improvements. Not radical and not overnight. But slowly but surely she was feeling better. It wasn't until a few months later that I started to really re think...
  6. I have never used Pamela's, but I think Bob's red mill tastes gross because of a bean flour they use. It over powers everything.
  7. Thanks, I am so glad to hear it. Xanthan gum is such a budget killer. I bake a lot and try to make everything homemade for my kids. It starts to really add up. I bought the Organ gluten substitute online but after shipping I didn't save any money.
  8. Getting a donation is a great idea. But if you don't have the time to get the donation, I'll give you my recipe. Buttermilk Pancakes 1/4 C sugar 2 Tablespoons shortening 2 Tablespoons oil 1 egg 3/4 C cornstarch 3/4 C potato starch 1/4 teaspoon xanthan gum 1/2 teaspoon salt 1 1/4 teaspoon baking powder 1/4 teaspoon baking soda 3/4 C buttermilk...
  9. Has anyone used guar gum instead of xanthan gum? I found one recipe, long ago, that called for guar gum and haven't used it since. Than I read in Living Without magazine that you can use either one. At my local health food store xanthan gum is $14.45 and guar gum is $5.35. For the same 8oz. I have always been to nervous to try the guar gum, I don't...
  10. Here's what Living Without magazine says: Add 1/2 teaspoon xanthan gum or guar gum per cup of flour blend to make cakes, cookies, bars, muffins and other quick breads. Add 1 teaspoon per cup of flour blend to make yeast bread, pizza or other baked items that call for yeast.
  11. The gluten free kitchen cookbook has the best pancakes ever. And she uses only cornstarch and potato starch. Both my daughter and I don't care for pancakes, but after I made these for the rest of the family, we both dreamed about these. They are so stinking good. We ordered something from amazon and they gave us a mix by accident. I think it was...
  12. When my daughter was newly dx'ed I bought a three ring binder and just started stashing information away. Everything any company sent me, any website I discovered, or any notes I took, or any recipe I printed. This helped me a lot because I could tell my daughter to get the note book and she knew how to look things up on her own. And I knew right where...
  13. One time I bought my daughter some turkey from the deli. When we were home, I noticed that something was on the turkey. The clerk had used the cheese slicer and contaminated ALL of my turkey. At the time we were doing a dairy challenge, I was so MAD. I am now only buying her packaged meats.
  14. I haven't tried going through my insurance, but I met with the one at the celiac disease conference in May. And all I can say is, I'm glad I didn't have to pay for that meeting. She just told me to let my daughter eat nachos and and to buy greek style yogurt. I would suggest eating well but still add a multivitamin.
  15. I understand your dilema, but yes I think you are overracting. You are not "the crazy allergy" mom, food allergies are serious. But that doesn't mean you can change the whole theme of the day. Don't be sad for your daughter, it is only going to make her feel bad about her diet restrictions. Feeling bad won't change anything. And I bet you think it is...
