  8. We have always only used cornstarch as the thickener for gravy. The first time I saw someone using flour I was stunned. And this was pre-celiac disease!!! So, just make it the way you normally would but use cornstarch instead. We always put the cornstarch in some cold water first to prevent clumping, mix it up and THEN put it in the hot broth.
  9. Just so you know, it is TOTALLY normal for kids to be ok with peeing on the potty and to not want anything to do with pooping on the potty.   11. It's true. As much as we don't believe it sometimes, they really will eat when they get hungry. They won't starve themselves. Now, that's not to say that there aren't legitimately foods they don't like. I mean, hey, I hate Lima Beans and Brussel Sprouts...oh, and liver...so it only stands to reason that our kids will also have things they just do not like...
  12. Here's the deal: only certain SIZES of Swanson are gluten-free. Which makes me wonder about thier TRUE GFitey :-) You have to read the lables. Some don't list wheat, others do...sigh...I stick with Herb Ox Bouillion myself. Bridget

  15. Are you sure this is food-phobia and not just his being three? They get sooo controlling at this age (mine is 3 too) and like to see what they can and can't control. My son was diagnosed in June and has eaten like a hog ever since. He started not eating dinner...but when he realized that meant there would be no food until morning he changed his tune quickly...
  16. Gluten Intolerance and celiac disease are different things, but can present in some of the same ways. Your doctor is right, this could be the case. The bottom line is that it's the same diet, so does it really matter if your daughter has celiac disease or GI? Either way, she's gotta be gluten free. Bridget
  17. Here's my two cents, for what it's worth: I don't think that stuffing a bird is going to effect the meat. They don't touch.... You could ask that the stuffing be cooked outside of the bird, but if that's not gonna happen (some families are less than helpful) when the bird is ready to be carved be right there and snag some of the meat from the first cuts so...
  18. Also, here's what I do when I get a list. I sit down with a highlighter and find all the things I might use/find in my area and highlight it. Then when I am looking for something specific, it's easy to find. Plus it makes creating my weekly shopping list a little easier when I can just go to a section and look for my yellow marks. Bridget

  20. Donna, I live in VT and if you tell me the company I can probably tell you. Do you have to avoid lactose too? If so, just be ware that some places process their syrup with cream or butter. Not a lot, but some people claim they have been effected by it.... Bridget
  21. Honestly, I'm no doctor but I think your son is too young to have created such "psychological symptoms". He's too young to really understand celiac disease, or know what it can cause, so I say it's the celiac disease. Have you gone gluten-free yet? These all sound like classic celiac disease symptoms to me...the parents on here have had a range of reactions...
  22. My son was 2 1/2 this June when he had his biopsy, and it was a piece of cake. The worst part was the IV, the rest of it was no problem. They put in an IV, and that's how they give the anesthesia. It burns a little going in but that lasts all of literally 10 seconds and then, BAM!, they pass out. THAT was weird. My pissed off, crying 2 year old son suddenly...
  23. My son was 2 1/2 when diagnosed...and his ONLY symptom was severe weight loss and "failure to thrive"....he had NO GI symptoms at all. None. You need to go and raise a big old stink in the waiting room of your doctors office until they take you seriously. Or, and this is my better advice, bypass your doc altogether and find yourself a Gastroenterologist ...
  24. Michelle, I was you in June. My son was 2 1/2 and went from 27 lbs in December to 23 by June, bloated belly, no energy.... When he was diagnosed I felt sooo alone, and so scared.   25. I actually bought a copy of Danna Korn's Raising Our Celiac Kids book for my daycare provider, and she LOVED it. Sure, he still gets glutened from time to time (those darn kids love to share! Go figure...) but it definitely helped her very much. Just remember, just bc you are paying more money doesn't necessarily mean they'll be better at this. It's gonna...
