I emailed Carvel today, asking specifically which of their flavors are gluten-free and if you can special order their cakes w/o the chocolate "crunchies" in the center as those contain wheat.   2. I made chicken "nuggets" this way for my son, but I had a problem with the breading sticking on...some had hunks of the bread fall off. Was this bc I turned it too much? Any tips on getting the breading to "stick" better?
  3. I would use a little of the flour you are already baking with, that way the taste won't change. But I'm also with everyone else, non-stick rocks!!! ;-)
  4. I've used Libby's Creamed Corn...and I have a can of Del Monte that lists modified corn starch, so I'm assuming that's safe too.

  6. I use Tinkyada as well....the best, most "normal" tasting/feeling/acting that I've found so far...and I don't add anything to the water and it cooks great. The thing to remember with this type of pasta is that you can never use too much water, but you CAN cook it too long, which leads to the mess you describe. Try cooking it for the minimum amount of time...

  9. "Mommy Instinct" is the strongest one there is...don't EVER doubt yourself. Isn't it better to over-react than to regret ignoring something later? A Pediatric GI is definitely the way to go, if only bc they can get the right tests done and then help you through the transition from gluten-full to gluten-free. I LOVE our Ped GI.   10. Well, I highly recommend the Gluten Free Pantry Chocolate Truffle Brownie mix....OHMIGOD. Even my non-celiac disease husband packs these in HIS lunch!!! Wow. That's all I have to say. The Bob's Red Mill are awesome too, but fresh. Once you freeze them and then eat them they are still good, but a little bitter. Must be the chocolate they use. Bridget
  11. That's weird...but I'm not sure it was the mustard either. Are you sure there wasn't something wrong with the turkey, or that you just simply weren't feeling well. I know that when my son doesn't feel well I automatically blame gluten, even when I know he hasn't had any. Sometimes, as the saying goes, a cigar is only a cigar....

  16. I have some good news for you. My son was diagnosed in June, he is 2 1/2 and he got so that he was hardly eating a thing. He dropped from 27 lbs this winter to 23 lbs. He is now 28 lbs and eating anything and everything he can get his hands on. I am here to tell you that more than likely once your daughter starts feeling better she will start to eat more...

It is so funny, bc after the initial shock of it all...and after the overwhelming feeling of "what can I ever feed him/her???" wears off....I think every single one of us parents dealing with this has had the same thought "It's only food, there's plenty of it out there, and it could sooooo be worse!" I know that my doctor tested for all the truly horrible...
  18. If your daughter doesn't have Celiac, I'd be amazed. Totally. Your daughter is my son...he was diagnosed in June at age 2 1/2 and he weighed 23 lbs...looked like an ethiopian....he had no GI symptoms, just the loss of weight. Good luck!!! Bridget
  19. Did you try the gluten-free Pantry yellow cake and cookie mix, or the Danielle's Chocolate Cake? I only ask bc I know the yellow one can be dry...but I've heard raves about the chocolate. Here's a suggestion, why not bake the brownies and frost those? mmmmmmmmmm....

  21. Have you had your thyroid tested? Could be that, I know that is one of the things they say could be a sign of hypothyroid....get it checked, it's a simple blood test. Bridget

  24. Just remember, if you've already changed her diet then her biopsy may NOT come back positive. Our Pedi. GI guy told us not to change anything until after the biopsy so that everything would test correctly. He just so wanted to be able to give us a "true" diagnosis.
