I think it's pretty typical of many things biological to have an increased sensitivity to a stimulus after that stimulus has been absent. I'm certain i became far more sensitive to gluten after a few weeks gluten-free. Maybe more so after months. -

Seems to me most of us know we "really have symptoms", biopsy or not. Whether or not a doc sees damaged villi won't change your behavior, right ? Re: DQ2 - My doc said that 90% of celiacs have DQ2( or DQ2 and DQ8), while the remaining 10% have only DQ8. One copy of either is enough to have the disease. I've seen some brands of Honey Roasted style nuts which had a bad ingred, tho i can't recall which ingred, or which brands. The xanthan gum isn't the problem tho. I'd clean it and use it too. Maybe do the test-loaf throwaway idea also. The store-bought gluten-free breads just don't come close to gluten-free breadmaker bread.

I just bought the Breadman TR2200C Ultimate Bread Machine ! Found that it IS programmable also. I just didn't want to end up wishing i had the versatility. Walmart.com actually has it online for $74 or so. (msrp $150 i think) I got it at Kohl's Dept Store for $120, but also got a 2nd for 1/2 price. hehehehe i remember the realizations like this. It can be a pretty long list. I think the times i had a bone chipped when the docs expected to see a break were also somehow related to celiac disease, tho i haven't heard much about bonechips.

I thought there was a difference in the set of anti-bodies for celiac vs gluten-intolerance. There are ppl who frequent this forum who know the specifics. I'd been having rice bread for years. and found i liked the EnerG brand best. But it's not even CLOSE to how great breadmaker bread can be. Over thxgvg my sister showed me how easy it is and how great gluten-free bread CAN be. I'm getting a breadmaker very soon. Heck maybe today - the loaf i brought w/ me on the plane back from sis's is almost gone !

The pills only provide the enzyme (lactase) needed to digest the lactose. The casein is a separate issue. I've found many lactose-free products which are not casein-free. Even the so-called "non-dairy" creamers typically have sodium caseinate and they even put in parenstheses on the label "(a milk derivative)". I still don't get how this came about that... -
Maggie, Many times i just eat before i go.
