  3. I was gluten-free 10 mos b4 going casein-free also. It was only then that i began to enjoy eating again. Previously, no matter how good the food was - even a fav food - eating was just a chore and 2 bites in i was ready to be done.
  4. I think casein can cause more than just quick-and-over symptoms, but certainly nothing of the magnitude of the damage done by gluten.     I've found sugar to be a problem for me now, and i too hope it lessens as the villi heal. The only sweet products i eat now are some gluten-free cookies which use one of the many 'natural' sweeteners, e.g. dehydrated unfiltered cane juice.   11. My personal belief is that had i gone gluten-free years earlier i would have fewer add'l food problems. In other words, the more damaged the villi get, the more potential for other foods to not digest properly. Isn't the typical celiac lactose issue due to damge to the area of the villi which secretes lactase ?
  12. Ahhh good u got a good loaf, glix. I was gonna say how Bob's is a 1.5 lb, not 1 lb. All of mine have turned out great w/ the same machine and mix. I don't even bother w/ the "egg-whites to make 3/4 cup" part (in addition to the 1 egg - fyi to other readers). I just toss in 3 eggs and haven't even mixed together the wet ingred, much less whisked them....
  13. My diarrhea and nausea didn't go away until i also eliminated casein (another component of milk). I had thought that every GI would know to try going casein-free when diarrhea doesn't stop after being both gluten-free and using lactaid. There's no pill for casein tho, so it means going pretty much completely dairy-free. I'd thought I'd miss milk and cheese...

I think it's gotta be the sugar content somewhere in a liquor made from cane, tho i haven't really tried to find out any details; just stopped drinking it.   20. I read a lot b4 buying one recently and every expressbake-type option i saw was accomplished by skipping 2nd knead/rise. So far i've made little mistakes 2 of the 3x i made bread, but it all turned out great. My paddle is small and w/ a 30-40 degree angle in it, and watching it work (lil window) i can't see what could be done better w/ a different paddle...

  22. I always vote to go gluten-free. Feeling better and better every day is hard to beat. The endoscopy looks for villi damage and the info i read when i 1st went gluten-free last year said it's 6 mo - 2 yrs for them to fully heal. Don't make yourself sick for a scope that can see damaged villi w/out making yourself sick.
