  8. This is where I have trouble with the doctor's interpretations of these tests! If a test result is 0, then 0 it is. But, less than 3 might be 2.5 and still a positive... Less than 11(?) is still a positive to me. My son is allergic to eggs. He had a very low score, so he was negative by the doctor...but, the poor kid has such terrible reactions to...
  9. Things I wish everyone knew about celiac: 1.) You're born with it, you will die having it, and you will live all your years inbetween being celiac--whether it shows itself or not! --You don't "outgrow" it, your body becomes stronger and "lives" with it better. That is why it is easier seen in the very young and the very old--their immune systems...

  12. One of those serious scrubby pads (for the skin) will take it away, but I think it is a skin reaction from a food allergy.   15. Don't worry about the term! As long as it is rice gluten you will be fine. Besides, if you've ever eaten rice, you've eaten some rice gluten already. Connie
  16. I noticed that soy bothered me just a little at first, then smaller quantities began to bother me... Now, I can't eat any amount of soy unless I want discomfort! I don't mind giving up the tofu, but even lecithin in chocolate bothers me now!! Keep an eye on your soy reactions! Connie SF for a few years now.

  18. Yes, I mash them--just a bit! I made a giant Toll House Cookie for a B-day party this week. I used a rolling pin to mash that one! It baked well, didn't crumble, and was yummy! The kids loved it! Warm cookies will crumble to the touch. If you want your cookies less hard/crunchy, try putting them in a sealed container until they soften up...

The American rice flour is such a large grind it makes foods gritty, but when you combine the other 2 Asian rice flours (fine and very fine) with it, in a 1:1:1 ratio, there is no gritty feel.   21. I've tried a few different combinations as well and they didn't turn out either! So, for the best results use a 1:1:1 ratio=1 part American rice flour, 1 part Asian rice flour, 1 part Glutenous rice flour. And, just use this mix for all the flour....   25. Hi Carmen, Good question! I baked cookies with my flour mix at 350F and they burned, but came out perfect at 250F. However, I bake biscuts with my rice flour mix at 350F all the time, and they come out perfect! Of course, I like them crusty... So.... I would try 300F and just keep an eye on it.
