  1. Oh, yeah... And, you can sub some of the flour for cocoa powder to make a chocolate cake--maybe 1/2 cup... (depends on how chocolatey you like your cake!) Have fun experimenting! Connie
  2. I made this recipe for my son's 6th birthday! It turned out GREAT! (40 thumbs-up!) I did bake it at 275-300F for 40-45 min.... I just think rice cooks better at a lower temperatures. Definately give it a try! (It makes great cupcakes, too ) Connie

  5. Thanks for all the advice and encouragement! I've been trying the slow but consistant approach, and I think it will work. I give her a few facts and figures when appropriate... This weekend I gave her Enterolab's brouchure. It seems the doctors now can't decide if her MIL has celiac or what! My vote is still on celiac, knowing it is difficult to diagnose...

  7. I've heard that some shredded cheeses are coated with flour to prevent them from sticking together!!! I wish they would list that on the package! Be carefull!! Connie
  8. My friend's 7 year old boy was just diagonsed with reumetiod arthiritus(where's spell check when you need it?). He can't walk well due to it, has food aversions, takes asthma medications daily. He, and his siblings, have ashen skin and allergy shiners under their eyes...(people are always asking who gave them the black eyes!) and they are so darn skinny...

  10. I've had reactions from canola before!! People (even here) think I'm mistaken, but long ago I read about canola being grown in fallow wheat fields. I think it's a cross-contamination issue.... Anyway, we won't touch it!! We use olive oil, corn oil, and sunflower oil (my favorite)--and butter. I buy products made with cotton seed oil, safflower...

  12. Hi All! I found a small Asian Food Market in my town, and the have the best rice pastas!! --just about any size you want, and cheap, cheap, cheap!!! I found it in the Yellow pages under "Grociers-Retail". Take a look--you'll be happy to find one! Connie P.S. Cook rice pasta on a low heat for a better result.

  14. In my opinion, migraines are related to food intollerences/allergies--not just celiac! I get a horrible migraine from Honey (of all things)! It starts 24 hours after I eat it, and lasts for 48 hours....Boy, was it was difficult to track down! Connie

Celiacs often have a skin condition known as Dermatitus Herpetiformis. Use that as a buzz word for the specialist. Maybe she could be checked for that--it's a sure fire way to diagnose...

  23. Hmmm....some of my readings are low also (60). Especially 2-3 hours after I eat--depending on what I eat (protien). Carbs and sugars make the whole set of reading higher, and mostly protiens make the readings lower. I've only just been diagnosed, and haven't had my 2 week follow-up visit yet.
