  1. Here is a Great yellow cake recipe!! Very light and stays together!! Yummy!! 30 people (non-celiacs) at our son's birthday party loved it!! Open Original Shared Link I like to add a teaspoon of cinnamon, and lower the temperature to 300F. (unless you use the All Rice Flours Mix....which is my definate favorite!) 2. Hi Guys! I'm still in love with the "3 Rice Flours Mix"! I feel like I can bake anything!! It acts light and fluffy like wheat flour and I haven't used xanthan gum in months. I bake it just like the recipe says. I don't change cooking temeratures, times, or liquid amounts. I think sifting it would be a great idea! I forgot all about sifting...
  3. We've been gluten-free for so long, we don't even think about it!! Connie gluten-free since 1-'98
  4. This happened to my hubby!! We were already gluten-free, so I started hunting for secondary food allergies, and BINGO!! He's allergic to pork! He cleared up within a week after we went pork free! Connie
  5. Hey! This is a really good Italian dressing! "Wheat & Gluten FREE There are no Wheat by-products, and we use apple cider vinegar instead of white grain vinegar." Open Original Shared Link Connie
  6. Azza, I bet you could! I'm not familiar with red rice flour or how fine it is ground, but I'm sure we will find a winning combination! Put each in front of you and feel the flours with your fingers. Taste them and find out their similar and different properties.... You're looking for a very fine grind--like cornstarch--velvety smooth, melts in...
  7. Martha, I like to use my "old" cookbooks! The gluten-free recipies are, well, weird!! Always some odd ingredient or way of making it that just isn't necessary with the right flour combination! I'm glad it's working well for you. I feel like the flour combo was just staring me in the face! But, I really did it to keep my baking costs lower...
  8. Here it is! Peanutbutter and Jelly Sandwich Bread~ I like this recipe especially for PB&J sandwiches!! It's just a tad sweet for meat sandwiches, though, (well for me!) Large bowl #1 4 eggs 6-8 Tablespoons white sugar 1/2 cup Mayo (makes it fluffy) 1 1/3 cups milk ------------------ mix until frothy Smaller Bowl...
  9. Hi Guys, I've been busy with the baby and haven't had a chance to read any posts in ages!! I'm glad you're having good results with this flour mix! I think that the reason it works sooo well are the three sizes of the ground rice. It acts like "real flour". I use this mix for ALL my cooking--pizza, cookies, flat breads, cakes.... I've been...
  10. Hi Chuot, On the package it says "Glutinous Rice Flour" in 5 different languages. The kind I buy is made in Thailand, from Erawan Marketing Co., which is out of Bangkok, (66-2)881-4040 is the telephone number! I find it at several of the local Asian food markets, so it seems to be popular. I buy it in 1 pound bags. I don't know about bulk.....
  11. Hooray!! I've done it!! It's so much like regular flour--try it and tell me what you think! Okay, I usually buy Bob's Red mill flour--or something of that type--and it's okay, but gritty... And, I like to buy Asian style flour, but it's too fine--like cornstarch... So, here's what you do: Mix equal parts of 3 rice flours-- Asian (fine)...
  12. I was soooo suprised to read such a good description of Food allergies, sensitivities, and intolerances!! I think newbies would benifit from this article. We should all read this whether we have a baby or not! Open Original Shared Link Connie
  13. It certainly could be a combination of things like caffeine, eating gluten and milk(in the coffee) together, low blood sugar, heat... But, I have had this happen to me with just eating gluten(accidentally)! I felt like I would fall off of the floor, and I was lying on it! It's like being really drunk ...and the room starts spinning,...
  14. How does one go about starting a microbrewery? I mean, I homebrew 2 different gluten-free beers (a red beer--hopsy and strong like a dark beer, and a lemon beer--sweet and sour like a lemon-aide beer) for myself and friends, but I'm not much on the business end... Anyone out there with some business sense? What steps would I have to go thru? How...
  15. I get migraines when I eat honey. I don't know if the bees are pollenating wheat or something, but I do definately believe that food sensitivities can cause migraines! Connie
  16. Some shredded cheeses are coated with flour to keep them from sticking together. I don't know if Kraft does it, or not, though. Connie
  17. Alright, when I eat a food I'm allergic to (soy, specifically) I get the "itchy butt". I have to be completely soy free to notice it. Anybody else notice it happening with a certain food? I think it is a food allergy symptom. Connie
  18. Not only can they be Kisses; but also bones, ghosts, mushrooms, bats, flowers, stars... or anything!! We've been decorating cakes and things with them for a while now. Get creative! Thanks for posting the recipe! Connie
  19. Hi Jessica, Glad you liked the poori! (Isn't it tasty?) I use sunflower seed oil, by Wesson. It tastes great and doesn't seem to smoke. Connie
  20. Crumbly did you say? Hmmm... I know it does cook differently in different ovens, but it won't hold up... Hmmm. I'd say use just a bit more liquid. Was the dough wet enough? If you press a dough ball does it crack to pieces, or stay smooth and just get flatter? It should do the latter. But, don't make it so wet that it sticks to your hand. (flour...
  21. I've been gluten-free for 6 years, and I've found that other foods can cause headaches. For me it is honey. It causes a small swelling at the top of my spine and as long as it is swollen I have a hummdinger of a headache! It starts 24 hours after I've eaten the honey, so it was kinda difficult to figure this one out. Maybe your little guy has an additional...
  22. I just fixed the PB&J recipe!! Mix as directed! Connie
  23. My first son was 100% breastfed and that was how we discovered celiac! He had such bad colic, I had to find out what was wrong. I heard he would outgrow it, but no one could tell me why he was colicky... So, thinking what was going in was coming out and why?, I omitted wheat and then gluten from my diet and he stopped being colicky-period! Also...
  24. Hi Azza, I hardly ever use xanthan gum--I'm usually out... Here in the US, our rice flour is a course grind. The flour I buy from Asia is very, very finely ground( like cornstarch). I usually mix them. I think the finely ground flour sticks to itself better so that's why I get away without using xanthan gum (or guar gum). What grind of flour...
  25. Hi Laura, I wish I could be of help on this one, but I never felt bad... But, I do remember feeling much better (if that makes sense!) Yes, you will have good and bad days. And, you will still learn a lot more about celiac and the diet. It takes some longer than others to undo the damage a life full of gluten has done. And, it will take a bit...
