	I use my old recipies! I just substitute a mix of 1/2 regular white rice flour and 1/2 glutenous rice flour (super fine milled from an Asian food store) and they come out great!! Sometimes I play with the liquid content...I know what I want it to look like... And, I usually forget the xanthan gum entirely (just forgetfull!) My main secret is to cook...

	After I went gluten-free, I noticed the same thing! I realized it happened more often when I ate soy. After the main food intolerence (gluten) has been eliminated, then the minor food allergies can show up. For me acne is the way my body tells me to avoid soy! 	Hey Sara! Looks good! When I'm out of bread crumbs, I substitute peeled, grated potatoes! (3 small-med.--don't let sit in fridge, they turn brown...) It works great!
