  1. Mariann, here is a recipe for mayo: 3 egg yolks 2 tsp lemon juice, plus more to taste any acceptable oil (pick one that is relatively flavorless, like canola, grapeseed, or vegetable) salt to taste sugar to taste You can make it by hand with a soft whisk, or in a food processor, or with a hand blender. Combine yolks with the lemon juice and whip...
  2. Mariann, Sorry it has taken me so long to get back to you on where I buy the flat fruit. You might try the Treetop website and see if they'll ship it in bulk. I buy mine at my local grocery store, in the same area as fresh produce, but your right, they are pricy, I pay 49 cents a piece, but luckily, I only have one child to feed, so it's nbot so bad...
  3. Thanks Laura! I have a decadence cake that is very similar, sometimes it's called a fallen souffle cake as well, because of the souffle method used to make it. However, I have never tried to make it into a roll cake and that sounds fantastic. Just for everyone elses benifit, this cake is awesome served with fresh whipped cream, as suggested by Laura...
  4. I actually lost weight when I went gluten-free for my son, but my son started gaining weight. I think it depends on the person. If you were really uderweight before you went gluten-free, you probably weren't absorbing most of the nutrients from the foods you were ingesting, now that your gluten-free, your body is making up for lost time. Also, I have...
  5. Thanks for all the recipe ideas and the support. I hijacked a Pastry chef friend of mine and she is going to help me expand my dessert section, becuase since I generally only cook "savory" cusine, my dessert section was lacking. You guys are great!
  6. I realize spring is here (or at least it is for you lower 48ers) and soups are going out of style for the season, but this one is fantastic and easy to make. It takes a little extra time at the chopping block, but start to finish it takes less than an hour to make, and it reheats very well, so you can make a bunch and have yumm yumm leftovers. Manhattan...
  7. Heather.... CONSIDER YOURSELF HUGGED!!!! Now for the suggestion part... do you like to cook? I remember reading that you don't work, so you should have lots of time to play with your kitchen! If so, feel free to e-mail me, and we can discuss your cravings, and I will help you come up with some smokin' good recipes that you will never miss your "evil...

    ARCHIVED Leaving

Heather, Thank you so much for that very sincere post. I am not in the medical field, but rather the restaurant industry, which in some sections on this board can take quite a bit of heat as well. But I do appreciate what everyone has to go through, on both sides of the issue. I pride myself in being able to sit back and force myself to look at things objectively...

    ARCHIVED Leaving

I can see both points. I have family members who are in the "medical community" and still more friends who are docs or nurses. Added to that I also have several friends who are diaticians, and these are actualy the ones who, I feel, get shafted the most. Because people think that the diaticians should be the most educated on every nutrition related disorder...

    ARCHIVED Leaving

Wow... thats a bummer and I'm sorry to see you go. I know that my son has been saved several times from potential gluten "accidents" from these wonderful people, so I hope that you will at least come back now and then to check out the information, new & old, even if you don't feel the need to communicate. Good Luck, and take care of yourself.
  11. I buy the "Flat Fruit" from Treetop for my son, it's 100% fruit and gives him a full serving a fruits per bar. He is also a very picky eater, but seems to love them. They also make a snack bar called "Fruit & Veggie" it's also 100% fruit/veg and gives them 2 servings of fruit & 1 serving of veg per bar.
  12. Hey guys, I know this is comming a little late, but I bet it has to do with some kind of soap or detergent you are using, and that the perspiration makes it irritate your skin. Remember that there is still some contraversy about whether or not soaps that contain gluten actually do cause reactions or not, but if you are hypersensitive, that may be something...
  13. Cool... I'm gonna make some fruity pebble "rice crispy treats" Hee Hee Hee.
  14. Hmm... I might have a mudcake recipe somewhere, but if you are interested in the traditional yellow cake, you really need to try the recipe jessica posted in this sections. It's posted Open Original Shared Link and it is really awesome, my non gluten-free family couldn't tell it was gluten-free, and its beautifully light and fluffy.
  15. Hi, I began seeing improvement in my sons health almost immediately, and he was nearly normal in about 6 weeks. He was 1 yr at the time of diagnosis and had been sick for about 3 - 4 months. He was fine for about the first 8 months of his life, then he contracted a severe infection that caused his celiac disease gene to "activate" itself. Because we were...
  16. I'm pretty sure the answer is no, I know they have oats and corn, but I also think they have malt, which makes them a no no.
  17. Celiac isn't considered a dibilitating disease, and you won't get any kind of aid (that I know of) just because of celiac, even if you were biopsy proven. That's the bad news.... The good news is, that no matter what disease you may or may not have, you may still be elligible for state/federal assistance and medicaid, that at least would help with the...
  18. It seems that many people who go gluten free become hypersensitive to any gluten contamination after they have been on the diet for a while. I don't know exactly what goes on to cause certain sympotms, but the disease basically makes the body and the intestine self destruct and the more suseptable or weaker areas are where you feel it most. My son, if...
  19. Oops, I forgot... Libby, I don't mind posting the rellanos recipe, give me some time to type it up though, I have it tucked into a drawer with my million other recipes and need to pull it out. It's really easy though.... roast & skin your chilies, then make a slit down the center and stuff them with cheese (I use monterey jack) then dip in rice flour...
  20. I made some "Char Sui Bao's" today (pronounced cha sue bow), they are a Chinese bun filled with barbequed pork. It was the first time I attemped this particular feat. I had been making them for a couple of years before we went gluten free and hadn't made any since because of the challange, but they turned out awsome! Not quite the depth of color that wheat...
  21. I didn't plan on singaling out any specifically ethenic sections, However.... I do have several ethnic recipes included, like Thai Beef Salad, Spicy Mango & Chicken Satay,Mexican Corn Salad, Chili Rellanos with red Chili Sauce..... am I making your mouth water yet? I also plan on including several Asian and Mediterranean dishes.
  22. Hee hee... thanks, I'm so nervous! I am drafting my proposals for the publishers as we speak and I keep thinking what if they hate it? or scarier still what if they love it? I think no matter what the responses are I'm gonna freak out.
  23. Okay all you fabulous gluten-free cooks out there here is the deal.... as some of you know I have been putting together recipes for some time now to put out cookbook. So far, I have nearly 100 recipes, but I would like to get a few more before I present it to the publisher. So if any of you would like to contribute, I'd love to hear/read your suggestions...

    ARCHIVED Do You Recommend Biopsy?

Unless the cheese was pre-shredded and dusted in flour, you should be okay, block cheese (for the most part) is gluten-free. Regarding getting the biopsy, I would recommend it. Your insurance company will be much more likely to pay for treatments if you are biopsy dx'd. Also, if you have or want to get a flexible spending account you must be biopsy dx...
  25. Yup, it's okay.
